    This breakfast is absolutely delicious! I've already made it several times with different veggies. I recently made the Greek sheet pan chicken with loads of extra veggies so I could use the leftovers to make these sheet pan eggs. I added a bit more garlic while warming the veggies up on the sheet pan, then added arugula and spinach to the egg mixture before cooking. DELISH!

    I bought your cookbook, and so far I’ve made your raspberry crumble bars twice and love them, chia pudding, And last night I made the balsamic roasted mushrooms last night and they are delicious! I have plenty of bookmarks of other recipes I’m excited to try! ❤

    I made something similar last summer, except for the onions. I also added some olives and named it an oven omelette. Not only is it crazy tasty, but also super nutritious and leaves you full for hours!!

    This looks super yummy! I'll definitely make this next week, but I'll try a more wintery choice of veggies. Btw, one of my favourite elements of the videos is always the part when Lisa says "... a medium-sized onion..." and produces one of the largest onions I have ever seen 😂

      Yeah! She says half a medium onion and I'm like that's one huge onion 😂. Same with the garlic cloves 6 of those I think would be at least 10 of mine.

    I have made the Mediterranean sheet pan eggs and its Delicous!! You wont regret making it. When I warm it up, I put in microwave 30 seconds or so and put a paper towel folded underneath the piece I am reheating. I make my toast at same time and add Basil Pesto on toast and a bit more of feta. Sometimes I add Shredded cheese too!
    Great sandwich mmm!!

    I have seen sheet pan eggs before, but this recipe really appeals to me because the veggies are roasted first. I love that and can't wait to try them! Thanks for sharing. 🌷

    Made it last night and it was delicious! I found some feta with sundried tomato that paired really well. Got a little creative (for me) and stirred sweet red chilli sauce into some greek yoghurt which was a great topper but really, a dash of tabasco with some extra feta might be the favourite. Can't wait to take it to work in wraps. Very versatile, thanks Lisa.

    great recipe. Thanks. Roasting tomatoes really takes the flavor to a new level. Another great idea is to roast tomatoes along with garlic and onion and then blend it all up for homemade tomato soup that is so rich and creamy you would think there was dairy in it but there is not.

    I just made it today. It’s excellent! I reduced quantities for a half sheet. Yellow onion since I was out of red. And did spinach. I also thought maybe it wasn’t fully cooked at the end, but it was just melted feta.😂 I think I will try some bell pepper and kalamata olives in the future. Maybe even switch out the tomatoes for sun-dried.

      That was my first thought- use a half sheet pan. Especially with current egg prices. I would also pick the same swaps and add-ins. Going to try this recipe soon.

    While I typically prep egg muffins, cooking things on a sheet pan has become one of my fave ways to meal prep. Plus, flattened things fit better in my small freezer

    We are enjoying your cook book! Made the lemon oregano chicken and potatoes and the broccoli salad for last weeks lunches, they were delicious! Though I couldn't find whole chicken legs where I went. I'll have to look around different stores next time, but thighs worked just fine. :) Excited to try some more recipes this week.

    I don't eat eggs anymore, but when I did, I used my cast iron skillet to do the same thing... I would chop up all the ingredients; whether it was potato, zucchini, tomatoes, olive, celery, onion, carrot, whatever you choose; put a little oil in the skillet, throw the veggies in, cook to desired brownness, or softness, then pour the egg mixture into the skillet and cook to desire...

    This recipe is what introduced me to Downshiftology! My husband and I love this recipe and are looking forward to trying many more. I just received your cook book and have read to page 64. I am already into meal prep but am looking forward to trying out your ideas and recipes. I am gluten intolerant, have asthma, endometriosis, seasonal allergies and had a severe allergic reaction to the covid vaccine which has lead to severe hives at any given moment in time. May God bless you for all the research and time you have put into trial and error and creating this wonderful cookbook!

      Just got it from Amazon and read the entire book! I collect cookbooks and I can already tell it’s a really good one! I can actually see myself making ALL of these recipes. One question…some of the recipes include cilantro and I have a slight allergy. What would you recommend to substitute? I especially wanted to make the shrimp recipe. Thank you!!
