I have done lamb chops and lamb steaks many times on the Blackstone. For the lamb steaks, I cut them to the thickness we like from a boneless leg of lamb. They are sooo good!! I use your Usual Suspects Seasoning along with smoked black pepper & salt, then cook them on butter. I also add butter to the tops after turning them over. After they reach 135, I will plate them up on a pat of butter and fresh rosemary while they rest. More butter makes it better. Keep up with the great cooks.

It may because we lived in Europe a few years while I was very young, but we always had lamb growing up. I'd say we ate it at least 3 times a month or more. I've always loved Lamb Chops, but also loved Leg of Lamb. With the leg I remember my Dad always butterflying it and grilling it after it marinated in red wine, rosemary and garlic... spectacular! I cooked lamb chops a few Sunday family dinners ago actually. I like to season them with rosemary, it really pairs nicely. I really like them anywhere from Medium-Rare to Medium-Well, it tends to be better than steak when it's a little overcooked. That being said, it is better closer to Medium-Rare if you can get it. Don't listen to the FDA, they ruin flavor, and never cook to their recommended temp, pull it beforehand and let it continue to raise in temp. It's really best to remove lamb from the heat between 125-130. Let it sit a few minutes and it should be perfect. I definitely try and pull it off the heat before it hits 130. A little more pink in lamb is really really good... especial the leg of lamb, I'd even say more pink the better. Glad you enjoyed, and I hope you can partake more often, lame is so underrated. Also a hint, they make very good meatballs. I mix beef, pork and lamb together to make the best meatballs. Griddle on!

You guys did an amazing job! I cut a rack of lamb into chops yesterday for Easter and grilled them over charcoal. Every other time I've had them they were "ok." I talked to a friend of mine who's Italian. He told me the REAL way to cook them. Salt, black pepper and a little lemon juice. He said all this mint and mint jelly crap is for people that don't like the taste of lamb! 🤣

Alright Brethren, those looked great (but just a bit well done)! No lie, the best lamb is the loin chop (mini T bones) over direct charcoal about 90 seconds on each side, or to about 124 degrees. Rest a few minutes. Seriously, no better meat in the World. For real.

I went to a high-end Brazilian rodizio restaurant one time, and they had a leg of lamb. I gotta say I did not like it. I had lamb on a cruise once, too, and didn't like it. At the start of the video, I was like, "they aren't gonna like the gamey flavor." I was surprised at the end that you both did. Maybe it was all that butter? 😆 Great cook, guys!
