On second viewing your Ganondorf is very very good for some one who seems like they don't main him or he's at least a secondary, massive respect I know I'd find you a very tough challenge in a ditto. Keep grinding man

As far as tech the gungnir combo is a must, it's basically a down throw to Nair but you delay the Nair a couple of frames and fastfall then you can true combo into a dash attack which combos into a ton more stuff.
A more niche tech ganondorf has is slingshot air dodge to "wavedash" its not the most useful but it's fairly useful against projectiles and makes a couple match ups actually bearable.
Then just generally to know, platforms are kinda op for ganon cause if you knock an opponent into a tech situation on a platform, upsmash and fsmash can cover all options depending on spacing.

Also don't be afraid of holding your up smash when some one is above you on a platform shielding, most just hold it indefinitely and will get shield broken.
Worst case scenario you miss, but I believe it's worth it for the shield break as it's 9.9/10 times results in a free stock.

You should try Ledge-Canceling.
Down-B at center stage towards a ledge and if done at the right distance you'll slip off able to input any aerial command instantly.
