As a “knife guy”, every time you cut onto that slate, a piece of my heart dies….
The music soundtrack was as perfect as the meat! Nailed it

Great job buddy. 504 area
This isn't Rus but thanks for watching on the Gulf coast
Great video just wondering what the time was start to finish after you got the temp to 250?
That's a good question and we've started asking our creators to share that info since this video was created. I'm not sure exactly but my guess would be 45-60 minutes; however it's going to vary from cook to cook based on the size, shape and starting temp of the roast so always go by internal temps to avoid overshooting. Thanks for watching.
Outstanding cook, Rus! I’ll bet I could knock half of that thing out in no time lol.
Thanks Mike! I couldn't have ask for better results.
Half...Pshaw!! #amateur!
lol. Just kidding, Mike.
@@SnSGrills lol 😂 you’re probably tight. I’ll knock that whole thing out!

There is a theory that the colder the meat is when you put it on the fire the more smoke it will absorb. I have not tested this, but I do put the meat on the fire quite cold.
This has mainly to do with the smoke ring. It stops forming after the meat reaches temps in the range of 150F, so the longer you keep the meat at cooler temps the more time it has to develop the smoke ring. Give it a try!
Ok
:)
Thanks for watching, Scott!
