      Same with me … old memories of living in Washington state relived through these videos but I’m in Europe for over 20 years. Where I’m living now, the only chicken/tofu teriyaki is from my own kitchen! And yet, I eagerly look forward to the next posting in this series.

    Since you’ve started this teriyaki adventure, I first thought of Okinawa. It’s been there for at least as long as I started working downtown (20 years) near the waterfront and was a staple lunch time spot. While I no longer work a few blocks away, I was glad to see them survive the pandemic unlike most restaurants that previously served the working white collar workforce nearby. Sometimes when I drive by, I’ll park on the street for lunch or a pre-dinner meal before heading home to the fam. I do so merely for the nostalgic aspect of it all, but to also support the family members behind the counter who have been familiar to me, even though I am no longer familiar to them.
    My go-to here: beef and pork combo

  • @ruke47
    @ruke47 7 месяцев назад +7

    Okinawa was a favorite lunch spot when I worked downtown. During the lunch rush the line is always out the door & wrapped around the block, but you're guaranteed that you chicken is hot off the grill.

    I love Okinawa! I was doing a Bainbridge commute for awhile, and it was right there on my way home each night. The building used to be a burger joint (Herfy's or Dag's - can't remember which). But that was the first teriyaki place I found where the sauce had a distinct five-spice hit. Not Japanese, I'm sure, but I have always done the same since. When I left Seattle I had no idea how much I would miss teriyaki - had to google "seattle teriyaki dressing" to find out how to whip up the salad dressing. But - it's been a minute, for sure - that used to be a $5 or maaaaybe $6 meal.

    Okinawa is in my personal top tier of Seattle teriyaki spots. The char is unbeatable. I haven’t had problems with dry chicken, but I’m coming down the hill with the lunch rush. I’m thinking kind of like Dick’s - it’s best when it’s freshest, and it’s freshest when it’s busiest.

    I work nearby and get Okinawa a few times a month. It can very a bit from visit to visit, sometimes a little saucier or less saucy, sometimes a little overcooked or just fine (a few times I had beef and had some dry leathery bits), but it’s usually fine overall. And they always have little cups of extra sauce, if you want.

It's suprising for a tourist area and at that price. Planning to be in the great nw this summer mucho mahalo Kenji. ps Sparking Ice soda is local and no cal. I'd like this, less sugar. Growing up I always heard their food was healthier, so all the sugar laden really dismayed me. Anyway, if I see sugar in a non dessert recipe, I slash it. BBQ ribs and pulled pork is my exception to sweetened protein...it would be the bacon bearing animal that would get the sweet exception. Even chicken BBQ I prefer just natural hickory smoke.
    Here the dressing on Japanese or Asian salads default to ginger sesame. So not too sweet or fatty. Maybe when they came to NC and saw all the vinegar BBQ they changed up the recipes.
    This is fun. Thanks Kenji.

      It's definitely relative. Unfortunately the prices in already expensive cities have skyrocketed in the last few years. Even fast food combos get easily into double digits now, and at "real" restaurants seems like high teens into low 20s has become pretty normal for everyday kind of food like this.

    • @JKenjiLopezMain
      @JKenjiLopezMain  7 месяцев назад +15

      And the higher prices still aren’t even in line with the general increased cost of ingredients and cost of living for employees. If food prices went up at the same rate as rent prices we’d be paying $40 for a meal like this.
