Steak House Dinner on the Griddle - Incredible scallop potato side dish

  • This steak house dinner on the griddle is an awesome date night dinner to make on your Blackstone, Camp Chef, or Pit Boss flat top grill. And these scalloped potatoes are a must-try! Loaded with flavor and the perfect amount of crispiness.
    We cooked some awesome ribeyes on the griddle with our house steak seasoning. I also did a little testing for this cook… seeing if adding a meat press/bacon press on top of one of the ribeyes made a difference in the crust. The steak with the press on top did have a slightly darker crust, but the other 2 ribeyes got an awesome crust on them also… so to use the weight or not is up to you.
    And you can’t have a steak house dinner without an awesome potato side dish, right? And these scalloped potatoes are some of the best potatoes to cook on the griddle (maybe tied with my hash brown casserole griddle cakes!).
    For the Scalloped Potatoes on the Griddle:
    Slice one whole potato into thin slices using a mandolin (be careful!). Then, rinse and drain your potato slices. Add the slices to the preheated griddle in a single layer and allow them to cook about 30% of the way on the first side. Then, flip the slices to the other side. The potato slices are done when you bite into them and they’re still slightly crunchy (not done but close).
    While the potato slices are cooking, make your cream sauce by adding some butter, minced garlic, fresh rosemary, heavy whipping cream, salt and pepper to a small cast iron skillet on the griddle. Allow to heat until it just starts boiling. Taste to see if it needs more salt or pepper. The goal is to infuse the garlic and rosemary into the cream sauce, but you don’t want to reduce it. After the cream sauce is done, transfer it to a separate bowl.
    Add some butter to your small cast iron skillet and layer about 1/3 of the potato slices into the bottom/sides of the skillet. Sprinkle in some shredded cheddar cheese and pour about 1/2 of the cream sauce on top. Then, add another layer of potato slices, cheese, and cream. Top with the final 1/3 of potatoes.
    Dome the scalloped potatoes dish and allow to cook in the skillet until the bottom of the potatoes is slightly dark. Then, loosen the potatoes from the skillet and flip them out so that the top of the potatoes are now in contact with the griddle surface. Just watch how I do it in the video.
