Hello my friend, thank you for doing the research, I appreciate that. Callaloo also comes in a can and is sold on Amazon, but it’s better fresh. I researched, and they’re a few African Caribbean(West Indian) grocery stores in Australia. They might have it fresh because Africans eat it too, but it’s seasonal so call ahead before visiting them.
Thank you for asking, I live in the States too so I know that feeling. I use the can callaloo version, specifically the Grace Foods brand, the rest of them don’t taste that good to me, but that’s my opinion. Also, I make cabbage or bak choi, with carrots sometimes if I can’t get any kind of callaloo.

Callaloo you can get in Indian grocery stores it is called red leaves.. it comes in red and green colour stems
