You done good Colonel. Miss Phyllis would have knocked it out of the ballpark. It has been a year or more now. Not sure, but we miss them. She sure loved you so much!
Stephen, this morning, I was just watching your Mom make her Infamous Raspberry Cheesecake and Chicken and dumplings! And, I’ve been meaning to make the onion pie for some time, but life happens. Your pie looks wonderful. I just adore onions anyway they are cooked. But, with butter and sour cream, you can’t go wrong!! ♥️🙏🏼♥️
I’ve never really heard of or seen an onion pie, but it looked really good. I have a bag of vidalia onions, eggs, pie crust, and everything but sour cream. Guess I’ll have to break bad and buy some. Not really a sour cream fan, but cooked in a recipe it’s usually okay.
YAY!!! Thank You , Colonel for sharing this one with Us. I think that I want to try this one for sure. You have been doing a Great Job with Your Mom’s old channel. I am sure that You feel as I do sometimes; I cannot believe that She is gone. Well As Always, GOD BLESS YOU, The Ravishing Mrs. and Your Wonderful and Beautiful Children.
Stephen, I have never heard of onion pie, until I was introduced to it, via your Mom's video. If that pie tastes as good as it looks, you are a winner! I applaud your tenacity making pie crust! Bravo👏🧅
Oh my, the finished pie looks so good. Great job Colonel, your Mom must be bursting with pride as they( Phyliss and Mr Bucky ) watch on from heaven. Your excitement ,as you taste test your pie, is a beautiful thing Colonel. You are becoming more and more accomplished with each dish you make, you should feel proud as punch. 😊🌟 Well done ! Take care.xo😊❤xo
Oh my, how is it that I never thought about baking a pie in an iron skillet!!!! I won't be able to sleep tonight thinking about making a peach pie! Thanks!
@@dmeyers2260 my kids love it so much they all have the recipe and getting my son his own iron skillet for Christmas this yr. they all will get a binder of 'mom's favorite recipes' this year as well.
You did a great job on that onion pie and I like your rustic description of the crust. I imagine your co-workers look forward to all of the tasty food that you share with them. I think cheddar cheese would be a good addition...who doesn't like cheese?
Mmmmmm. Sweet onions are by far the best ever to go with a pot/slow cooker of beans! Definitely a very delicious meal with yellow cornbread, baked in a cast iron skillet. Mmmmm. Definitely need real butter. Salted butter unless you enjoy Vaseline taste. 🤣 Sweet Onions - Walla Walla and Vidalia are the most common kinds of sweet onions. These onions lack the sharp, astringent taste of other onions & really do taste sweet. (It's the lack of sulphur that removes the burn/bite.) They are fantastic thinly sliced & served in salads or on top of sandwiches. ✅
My friend I need to send you a spatula so that you never again throw away all that residue like the sour cream. Your mum would approve ....................of a spatula. Thank you for the entertainment and recipe. Looks wonderful.
Thank you Steve for you mother's recipe and it looks really tasty. I will try this in the future but I took the filling recipe to make a broccoli souffle casserole without the crust. I have been wanting to try this and your mom's recipe allowed me to do that. Thank you so much!
Happy Friday Colonel!! Onion Pie is Right Up my Alley!! Looks So Delicious, I Can't Wait to Try It!! Love Your Cooking!! God Bless You and Yours Always!!🙏🦋🙏
I can't wait to make this onion pie! Cheese is a great idea. I think it should be grated as finely as possible. Larger pieces of cheese would definitely mess with the integrity of the custard filling. I am going to try this pie with several different types of cheese ~ may start with Gouda and then try a mild colby. As always Colonel, your videos are quite charming. Watching you cook is such a treat.
This the best. I make it alot. I live in Tallahassee so get Vidalia onions which are amazing in the pie. I'm on my way shopping and think I'll be getting some onion pie fixings..my pie crust is frozen though lol
Looks so good! I bet it smelled wonderful baking too. Your crusts are getting better, keep trying and make it pretty too. 😀 we are still having cool weather in SC. I love it, but we sure need rain. Take care and enjoy that onion pie.
Great pie I have never heard of onion pie ever must be a southern thing but it did look good and the pie crust was very flaky so you did get the hang of it maybe not in looks but We always said you can not judge a book by the cover. and I still as many times as I washed your Mom make the pie crust could never see how she did it so Fast and perfect.I guess she just had the knack for it. Enjoy the videos Can't wait to see what is next. Hope you do not get to hot boy the weather there is very warm I would melt but at least you do not have to deal with the storms. till not time Crazy in Kansas😀
I've never heard of an Onion Pie....leave it to Phyllis to know how to do this. I just watched your 2nd pie crust Vid (the one you're now enjoying) and it may be Rustic looking, but heck - any one would be proud of that flakiness!! And pretty really only matters in a Bakery or if you have snooty relatives. I agree that maybe some sharp cheddar would be a great addition or substitute for the Parmesan. Great job once again Colonel 💙
Steve!! Hey! Just wanted to share part of my world with you. Largest air show (& fireworks) in USA. Thunder Over Louisville! Very southern IN. First year was 1989. 🇺🇲 This is year 33! It's become so very large, it can be a little wild for New Albany, & Jeffersonville residents as parking anything, including HUGE RV's, food trucks, etc. Many residents rent out their homes for the weekend, & charge $20 to park in their driveways, etc. I remember being AMAZED the very first time we saw the STEALTH, ever-so quietly fly overhead. That was 2nd year perhaps. I keep thinking of the name 'Raptor', will be flying over for Southern Indiana & Louisville, KY. Now, there's so, so many to fly over! Absolutely amazing. Many, many people from all over the USA began taking part of their vacations to include 2 -3 day stay overs in this entire area. Be sure to remember, we have the Ohio River that's what separates IN, & KY. It's truly a sight to see at least once. Absolutely amazing in every way. Just type in Thunder over Louisville schedule for air show. And, it's our very first day of warm, nice day here. 83°. Wishing everyone a blessed, beautiful weekend. 🇺🇲 ♥️ 🇺🇲 ♥️
wtg, I love that pie so much! yours looked pretty darn good! I always add anywhere from 1-2 handfuls of cheddar cheese into the mix, so I bet you'll like that. When I make it I usually do 2 pies at a time, and 5lbs of Vidalia onions because I just can't get enough of them LOL
Thanks for sharing the recipe Steve. Do you heat up the leftovers or eat it cold? I love onions, any type, but my hubby not so much. I'll probably be the only one eating the pie and I don't think I could eat the whole thing at once (I probably could but shouldn't) Stay well and safe.
Greetings from South Carolina Steve! This pie looks delicious! I love onions. I've never tried onion pie but have heard it's really good. Seeing how good yours looks I think I'ma try to make one. Thanks for sharing! Have a great day & stay safe friend. Looking forward to your next video. 😀
So, how about calling it Colonel's Crust (better than Crusty Colonel, heh?) Would caramelized onions work with this recipe? The custard you made sounds like it would pair up quite well...do you think so?
I reckon it will be excellent with a salad, but having been a caterer in one of my lives, I’d have to modify it, bacon, maybe some tomatoes. But first I’d do your version to see what it’s like. I have a man who thinks he needs meat with every meal. Hence the suggestion of bacon. Haven’t seen you for ages, I must make a point of looking you up more often, good wholesome food that sticks to the ribs. I can’t abide these fancy dishes that take forever to make and have weird flavours. Adding nutmeg sounds good though. I’ll also send this to my son in Australia, he’s trying to live more like what he experienced as a kid I’m in New Zealand by the way. Sorry for the book
I haven't tried this one, basically because my husband hates eggs that have been browned. I wonder if tenting it after the first 15 minutes would work 🤔 I need to try something like that, I like quiche he hates it BUT will happily eat an omelet made from the same ingredients, so I just fix omelets. 🤷♀️
This was one of the very first video's I watched of your Mom's. She so reminded me of my Grandma Doll, there cooking styles were so similar.
I, too had a grandma Doll. She lived in Pittsburgh, PA. Any relation, 'cause this is the first time I've heard that name?
@@marymcdonald3778 IDK... Our Doll side is in Wisconsin. No one in Pittsburgh that I know of.
It’s wonderful you live and work away from home and still cook from your mother’s recipes:) Much respect!
You done good Colonel. Miss Phyllis would have knocked it out of the ballpark. It has been a year or more now. Not sure, but we miss them. She sure loved you so much!
I'm loving your "rustic" crust, it makes for some lovely crispy bits. Thanks for sharing, Colonel! 👍🏼

Smoked Gouda cheese would be a good flavor to try. Yum!
So good! I always make my pie crusts using a slurry mixture which I find turn out the best for me.
What’s a slurry mixture?
Definitely making that! We'd call it a quiche in the UK
Awesome job Steve! Your mom would be proud you should ask your friend from work for his recipe for sweet potato’s you talked about in this video!
