Phyllis Stokes' Gotta Have Something Sweet Cake

- I reproduce one of Mom's most popular desserts. I'm admittedly not much of a baker, but this one is pretty easy and turned out delicious!
Ingredients for the cake:
1/2 cup salted butter (1 stick), softened
1 cup sugar
1 teaspoon vanilla extract
2 large eggs, beaten
1 1/4 cup all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
dash of salt
1/2 cup buttermilk
Ingredients for the glaze:
4 tablespoons butter (about 1/2 stick)
1/4 cup buttermilk
1 3/4 - 2 cups powdered sugar
1/2 teaspoon vanilla extract
Directions for the cake:
1. In a large bowl add the softened butter, sugar, vanilla, and eggs. Mix until blended well--about 2 minutes.
2. In a separate bowl, add the flour, baking powder, baking soda, and salt. Whisk together until mixed well..
3. Alternate adding 1/3 of the flour and 1/2 the buttermilk until its all in the batter, stirring just until it's mixed. Pour batter into a greased 9" x 13" casserole dish. Bake at 350F (180C) until the top springs back when pressed (about 30 minutes). Remove and let cool.
Directions for the icing:
1. In a small saucepan, melt the butter over medium low heat, stirring constantly.
2. Add the powdered sugar, vanilla, and buttermilk, and stir until desired consistence (about 3-5 minutes). Add more buttermilk if it's too thick.
Pour the glaze over the cake, spreading evenly. Make sure some of it runs down the side!

Well I feel I must stick up for "liver lovers". So so good. When it's cooked right, it's divine! When it's cooked wrong, it's not bad either!
Liver and onions, liver and fried apples, with a few strips of bacon, mashed potatoes and gravy...have mercy! Or chopped liver spread on rye bread or saltines. Now that's good eatin'
Gonna give it a try. Love that you don't have to run out and buy the store.

Liver coated with Italian bread crumbs then baked in the oven is really good.
@Yayatrucker Oh, I'd love to say that makes the Liver sound more appealing, but I'm with Steve here - childhood memories are making me wince just thinking about liver. Maybe if it were Italianed up more after it were cooked like I remember it being done (dredged in flour, your Italian breadcrumbs, and fried) then turned into a Parmesan with sauce and cheese....possibly. but I'm still wincing, so I'd probably need to see the finished version at the start of the video with it being savored by the Cook/Chef/Taster first - but I cant promise anything. Maybe is Steve reads this, he'll feel like experimenting...but that is a lot of IF's right there.

Steve…just FYI;: this video shows 2 clips of you melting the butter on the stove (repeats itself there) …then rolls into your glazing the cake…also shown twice. Never see where you add the sugar to the butter.
Yeah...lesson learned. Never be in a hurry putting these videos together. LOL!

So you put melted butter on top? For some reason the video is repeating certain parts but I think some of it is missing it looks good

Glaze:
4T. Butter, browned
1 3/4 to 2 c powered sugar
1/2 t. Vanilla
Brown butter.
Stir all together
& Pour over cake

When I read the caption, I could hear her voice saying that phrase.
You say you just melt butter and pour on top. I saw it twice and am not sure if I missed something. I'm sure everyone loved it. Looks yummy
He showed melting the butter twice...He did add other things to it but didn't show it but the directions are in the description below..I thought I missed something too and had to go back and watch it again..
Watch Phyllis’ video as well. I think I poked a few small holes in the cake as well. It does harden after Cake has fully cooled.
@@kellykeller5741 I thought I fell asleep when I saw him pouring pure butter on top the cake. Ick! Then it repeated. Same pure butter. Then I figured it out. LOL I was less concerned about sugar than I was cholesterol.

Gotta Have Something Sweet Cake recipe of your momma's has been the recipe I go to since Miss Phyllis posted the recipe. Gosh, I sincerely miss her. My husband has passed, so I am alone usually, except for my son's who come in to make sure I am ok. So, if it's not one it's the other. They sure love their momma, and I can see this trait in Miss Phyllis' son, Stephen. Perhaps this is indicative of sons and their momma's, I only know it's beautiful. Have you tried chocolate covered bacon? 😆 Becky on The Hillbilly Kitchen has a good recipe. My husband loved it but I would have rather eaten the bacon plain and had a candybar afterward. 🤷♀️

When you said the vanilla extract smelled good, it reminded me of the time my granny told me, when she was a teenager she dabbed a little vanilla behind her ears and on her wrists. No money for much of anything much less for something like perfume! Sometimes you just have to work with what ya got! 😁
I think vanilla smells a lot better than most perfume, anyway!

Steve, I have a challenge for you. A lot of your mom's recipes weren't that quick and easy but one of my faves was "Bacon and Egg Biscuits". The part where she removes the "squigglies" from the yolks is SO me! I can't deal with those things.. they ick me out lol. But ANYTHING you decide to recreate on her behalf is going to be amazing! You can't go wrong with Phyllis' delicious food!
Looks great Steve. Batter thickness got me thinking of my Gramma's and Mom's Rhubarb Cake....so good. I know, Rhubarb, but this cake really is good. I'm going to have to figure out how long that is until it's in season, here in Western NY (Orchard Park) 'cuz now I really want some. I haven't! I've looked for green tomatoes here. They just don't sell them!
It’s a thin cake. Your mom made it in a 9 x 13 inch pan as well. If you wanted a thicker cake, just bake in an 8 or 9 inch square pan, but you’ll have to adjust your baking time. I make this cake quite often. It’s a favorite of mine. Your mom’s goal was to remove the liquid from the butter, leaving just the fat for a more buttery flavor. This cake with the glaze is very sweet.

My mother made this 🍰 cake all the time with buttercream frosting like your mom we ate it with strawberry ice cream or cool whipped and fresh strawberries.its a good cake.

Looks good! FYI a blender is an enclosed jar with a rotating blade, and a mixer is wire whisks whirling in a bowl (say That fast 3 times!). @@dezs7564 I’m also a military wife. I was not saying that he wasn’t being Patriotic in anyway. We just have to be very very careful as to giving the whereabouts of our family members when they are deployed. He also knows this being in the service himself. I was just worried about his sons safety is all. I know that the Mediterranean is awfully big and I also know that there are military bases in and around the Mediterranean so it wasn’t as if he was giving away his location but still makes me worry that’s all.
I know what you mean. I believe I was sufficiently vague as to his whereabouts. The ship he's on has been regularly posting on Facebook, so I figured it was alright to mention it.

Whenever you recreate one of your Mom's recipes, I go back and find her video . Noticed that neither your recipe nor hers included written directions for the icing. Also, she added Karo syrup to her icing in theth video...nowhere mentioned. I'm sure both cakes were delicious...yours was VERY dark...hers was very pale. Odd.

This was one of my favorite recipes. I think I’ve made this four or five times and it just gets better every time. I sent away to Amazon for self rising flour the White Lilly that’s what she uses. It’s deliciouses, I just use her regular recipe with vanilla icing.

This is the best cake. It's delicious and easy, I don't know how many times I've made it. Sometimes I add strawberries or blueberries before I stick it in the oven! Ummm.
