I freeze cream cheese & sour cream both. I've found that, with the cream cheese, if you let it thaw completely and then whip it with your mixer it will do well in things like dips and spreads as well as baking. The sour cream needs to thaw completely and then be stirred well before each use. I freeze pancakes and waffles in huge batches too. I work nights & I like knowing that even if I'm not here to make breakfast, my teens still have a hot breakfast option before they head out on those cold Alaska mornings! We don't have a toaster oven, but both do well in the toaster or in the microwave, in a single layer around the edge of a plate for 30-60 seconds. I always have bananas in my freezer. They're great for smoothies and in banana bread, after they thaw, of course! I also pick as many wild blueberries as I can & freeze them. A good harvest will last us all winter! I've heard it changes the consistency, but not flavor so best to use in cooking dishes. I've only thawed the sour cream to use. it definitely changed texture when thawed. it was liquid like milk, but tasted fine. I didn't try it, but next time I'll probably add a tsp of corn starch to thicken it up.

My freezer is mostly stocked with individual portion microwave / toaster oven meals I buy at a shop in Canada called M and M Food Market! I'm a single career woman (med lab tech) who works a lot and shift work is a large component. I would buy food intending to cook (and I can be a good cook). But I'd be like ugh I'm tired toaSt and milk for me! So at least now I have healthy portioned meal waiting for me more nutritious than toast and tea. They also do lots of frozen family meals meats fruits and veggies and sides and desserts. I'm not an affiliate you should see what I live on:))I do cook still but at this point it keeps me fed at least once a dayz👍🏻

Ive heard if you wrap a frozen breakfast sandwich or burrito in a damp paper towel then microwave it it helps it not be so dry and brings the moisture back to it

My mom is 70 and shes on a very budget. Someone told her that if you shake even when you don't drink it, it last longer. So I tried it. I'm not a milk drinker because I'm lactose intolerant. Lady Fudge, it lasted 1month after the expiration date. Way cool! Cream cheese; don't freeze it. I shop at dollar general, cuz I have to, the cream cheese I bought, didn't have a creamy texture. I found out that it was frozen before I got it. Thanks again for sharing. P.s. 2 stores I can shop from: dollar general and martins. I am single and live in a one Bedroom Flat. I have a Larder under counter type Fridge and a similar sized Freezer. The bottom tray holds either 2 800 Gm loves of bread or 3 400 Gm with room for a Pack of Large Pitta Bread, So I definitely freeze Bread all the time. I freeze Semi Skimmed Milk all the time. My local Supermarket has a Normal Basics range. One of which is Cheese. I normally buy Mature or Extra Mature Cheddar, But there basics one just said Full Flavour, It is cheap @ £4.50 a Kilo. I bought one about 3 weeks ago and it is definitely strong enough. I have a small wire Cheese cutter so cut the block into 4 pieces then slice those smaller blocks. They go into Zip Lock bags stacked together then into the freezer. When I want some I insert a knife to split off how much I want so I do not have to defrost it first. I normally go meat shopping on a Sunday. They reduce the price of things with that date sell by, They close at 4 pm so further reduce about 2 pm and remove from the shelf after 3 pm. I cook mostly in a Small Slow Cooker so often buy Shin of Beef, A cheap cut of Beef. I get them to pack it in portion size bags, That way it is labelled and I can just take out what I need. If I am at the Supermarket I also pick up packets of Bacon Off cuts, Family Packs of Chicken, Whole Black Pudding and Hog's (White) Pudding and Sausages then when I get home cut them down to portions, Cling Film the Portions then each goes into it's own large Zip Lock Bag, That way as I take one out I can see how many I have left.

This is where the Portions of Bacon, Black Pudding, Hog's Pudding and Sausages from the Freezer come in useful. I take them out the evening before to Defrost. I like Live and that freezes very well, That I always get them to packet in portions, Things like Pork Haslett and Pork Luncheon Meat I use for sandwiches and they freeze well.

I I've been freezing cookie dough for many years but instead of putting it balls I roll it out on cookie sheets and use my meat cleaver to cut it into small 2-inch squares and makes it easier to put into Ziploc containers otherwise the back might get a hole and get freezer burn

The texture of cream cheese changes when it is frozen so it won't taste that great on your bagel. Use frozen cream cheese for cooking & you won't notice that it was frozen.
Cottage cheese and sour cream come out a little weird from the freezer. I have frozen ricotta cheese with success, it might be slightly soupier than before. I always freeze the logs of goat's cheese that I get at BJ's, which is like Costco. They come out of the freezer perfectly normal and delicious!

I buy blocks of cheese & when I get home I great it all then put it on a tray into the freezer to freeze then I vacuum seal it into portion sized bags. I do separate the slices & put parchment or wax paper between then I vacuum seal them & put into my freezer. I make yogurt bark or yogurt drops & freeze them as well. Cottage cheese can not be frozen however you can turn the container upside down in your fridge & it will last longer. Cream cheese can be frozen but it does change the texture of it so use it in cooking & not on a bagel.
We do this with cottage cheese and sour cream and we've had it last 2-3 months past it's best before date. We store it in our "beer fridge" in the basement which we keep quite cold.
Mary Collier I make huge batches of cookie dough and put it in freezer bags, mash it flat and freeze that way. Then when you are ready to make some cookies just cut through the bag and make squares and cook them from frozen. They should only need a couple minutes extra. I have done this with chocolate chip, pumpkin chocolate chip and soft molasses cookies. They turn out perfect!

I found out that when you take meats out of its containers, wrap them in wax paper, foil, and then freezer bags; this will protect them even longer. I'm in a household of 1. We never freeze cheese. We go through it fast. we like to eat a lot of baked potatoes. I do freeze meats and wrap then up really good. I used to freeze my meat in the tray it's wrapped in but I got a lot of freezer burn. now I wrap it myself.
I don't know if its just me but, I've noticed that once milk has been frozen (and thawed of course) it seems to not spoil as fast. I'm no expert of course but it makes me wonder if freezing it doesn't kill off some of the bacteria in it that causes it to spoil quicker. I will also say that I have tried freezing cottage cheese because one of my FB friends said she does it but the texture was just weird.
Yes to all of these, but I haven't personally done milk. Does it have any sort of weird separation when you freeze it? I know you mentioned shaking as it defrosts.
I haven't found any separation, but it does turn into a slushy when defrosting. Shaking helps break it up. We leave it in the sink to defrost most the way and then put in the refrigerator so it speeds up the time.
I have a question. If i frezze the milk for a month , and the expiration date is up. Does it affect the milk or i need to buy a pasturized one that last more?
How long do you have to use your milk once you’ve moved from freezer to fridge . I freeze cream cheese and ricotta no problem, I just take cream cheese out of the box and put in a freezer bag .

I make my husband breakfast burritos to freeze at work. I always wrap individually in foil and then all of them in a bag. Just unwrap and microwave. Seems to work for us. The tortilla can go hair if you over heat though.
It was just regular 2% reduced fat, however that was a long time ago! I was just sharing my experience! We now have a dairy allergic little one so we don't usually even buy milk for my older kids anymore :(

Ricotta cheese can be frozen but you need to drain the liquid out of it when you thaw it. Then just stir well and use like normal.

Ive frozen cream cheese and ricotta. Granted I only use ricotta in lasagna or manicotti so it was fine. I didn’t notice any change in texture.

We do this with cottage cheese and sour cream and we've had it last 2-3 months past it's best before date. We store it in our "beer fridge" in the basement which we keep quite cold.

Mary Collier I make huge batches of cookie dough and put it in freezer bags, mash it flat and freeze that way. Then when you are ready to make some cookies just cut through the bag and make squares and cook them from frozen. They should only need a couple minutes extra. I have done this with chocolate chip, pumpkin chocolate chip and soft molasses cookies. They turn out perfect!

Oops! I was typing and missed what you said, sorry. I found out that when you take meats out of its containers, wrap them in wax paper, foil, and then freezer bags; this will protect them even longer. I'm in a household of 1. I will need to find a way to have products last longer. I don't have a printer and this iPad is 5.1 first generation, so I'm limited. Do you have any suggestions to work around this? We never freeze cheese. We go through it fast. we like to eat a lot of baked potatoes. I do freeze meats and wrap then up really good. I used to freeze my meat in the tray it's wrapped in but I got a lot of freezer burn. now I wrap it myself.
I have a dedicated cheese drawer in my freezer... we use alot of cheese and when I can get it for super cheap, I stock up. Big time.

I don't know if its just me but, I've noticed that once milk has been frozen (and thawed of course) it seems to not spoil as fast. I'm no expert of course but it makes me wonder if freezing it doesn't kill off some of the bacteria in it that causes it to spoil quicker. I will also say that I have tried freezing cottage cheese because one of my FB friends said she does it but the texture was just weird.

Yes to all of these, but I haven't personally done milk. Does it have any sort of weird separation when you freeze it? I know you mentioned shaking as it defrosts.
I haven't found any separation, but it does turn into a slushy when defrosting. Shaking helps break it up. We leave it in the sink to defrost most the way and then put in the refrigerator so it speeds up the time.
I freeze cream cheese too....i buy it on sale and end up using them in cooking or baking......not as spreads though

No, it does not affect the milk. Once thawed it lasts a week or so

How long do you have to use your milk once you’ve moved from freezer to fridge . I freeze cream cheese and ricotta no problem, I just take cream cheese out of the box and put in a freezer bag .

I want to make breakfast sandwiches. I made frozen burritos and I felt like the tortilla was hard. I wrapped them in a damp cloth.
I make my husband breakfast burritos to freeze at work. I always wrap individually in foil and then all of them in a bag. Just unwrap and microwave. Seems to work for us. The tortilla can go hair if you over heat though.

JensBigBlend I've frozen milk too, and the taste is fine, and not curdled...although I have noticed that it separates a bit. 😊
It was just regular 2% reduced fat, however that was a long time ago! I was just sharing my experience! We now have a dairy allergic little one so we don't usually even buy milk for my older kids anymore :(
