Thanksgiving Side Dish Pineapple Casserole

- Staying with Thanksgiving side dishes, here's one that I think all of you will love. If you like pineapple, you will like this. Is it really a side, or is it a dessert? Actually, you could probably use it for both. Try this on your Thanksgiving table or even your Christmas table. We make it for both. It is another family favorite that we can't do without at the holidays. And, it is even a great dish for anytime. Serve it at your next bar-b-que. Pineapple goes great with pork.

Ingredients
2 20oz cans pineapple chunks, reserve the juice
6 Tbsp reserved pineapple juice
1/3 cup granulated sugar
5 Tbsp flour
1 cup cheddar cheese, grated
1/4 cup butter, melted (1/2 stick)
1 sleeve Ritz crackers, crushed
Preheat oven to 350 degrees
Butter 2qt casserole dish
Combine flour, sugar, and pineapple juice. Stir well. Add pineapple chunks and cheese. Toss together to combine. Spoon into casserole dish and top with cheese. Combine crackers and butter. Spread on top of pineapple mixture. Bake 350 degrees 30 minutes or until bubbly.
I would never think to mix cheese with pineapple…..but I think I need to try this! Thank you for sharing your wonderful recipes 😊

I’ve made the Paula Deen recipe of this. It’s amazing and pineapple goes perfectly with ham. We actually like it better without the crushed up crackers on top. They’re only good right out of the oven. Then they’re soggy. You hit another recipe out of the ballpark!!!! Love you sweet lady. ♥️🙏🏻🇺🇸

I’ve never heard of this, but I’m absolutely making one! One of my favorite summer things is a pineapple sandwich - two rings of pineapple, a slice of American cheese with Miracle Whip on fresh bread. My granny made them and I thought they were so fancy. ❤️

What an interesting recipe! I never would have thought of putting cheese with pineapple, although some cheeses are wonderful with figs. Thanks for sharing this innovative recipe. And, I do have to say that pork chops with apple butter is amazing.

Karen, my family loves pineapple casserole. I always make it for Thanksgiving and Christmas. We prefer white cheddar cheese. It is delicious. Oh, and I always drink the leftover juice after it has been in the refrigerator for awhile.

Can add baking powder to your flour to make it self rising for those who do know..one tea to a cup of flour.

AppleBarn restaurant in Pigeon Forge serves a juice blend called a Applebarn Mint Julip. Save the Pineapple juice for this refreeshing breakfast drink.
1qt Apple juice
1 cup orange juice
1 cup pineapple juice
1/4 cup lemon juice
Mix and serve over ice.
Serves 6
