One Pot Meal, the Best Cheesy Broccoli Chicken Rice Casserole

- This one pot meal has everything that you need. Come home from a long day at work and you can have a meal on the table at no home. Or, you can put it together, stash it in the refrigerator, and bake it tomorrow. Easy, easy, delicious.

Ingredients:
1 Tbsp oil
1 small onion, chopped
2 chicken breasts, cut into 1" cubes
1/4 tsp salt or to taste
1/4 tsp black pepper or to taste
2 tsp garlic, minced
1 cup cooked rice
1 can cream of chicken soup
2 cups chicken broth
2 cups broccoli florets
1 cup cheddar cheese, grated, mild or sharp
1-2 Tbsp sour cream, optional
1/2 cup Panko breadcrumbs
1/2 stick butter, melted
2 Tbsp grated parmesan cheese
Preheat the oven to 350 degrees. Add chicken and onions to a hot pan with 1 Tbsp oil. Season with salt and pepper, cook until chicken is browned. Add garlic and cook for 2 minutes. Add the rice, broth, soup, sour cream, and 1/2 cup cheese stirring to combine. Fold in the broccoli. Cook for 2 more minutes. Sprinkle remaining 1/2 cup cheese on top. Combine breadcrumbs with melted butter and parmesan cheese. Spread over top of chicken mixture. Bake for 30-35 minutes until golden brown and bubbly.

I like the episodes where Paul comes in from work & eyes all the wonderful food and you serve each others plates...so sweet and genuine. You two are so special and your affection for each other is very obvious. It's cute when your cat sits on the kitchen stool and watches you cook. You can tell he feels right at home in your kitchen. Another great looking and wholesome recipe. I've had a boxed version of this in the past, but, it looked nothing like the one you made with care and love. Ok….so I’ve made this recipe twice now. So delicious and definitely in my rotation of meals to create too!. BTW, I made the corn casserole for Christmas to bring to my daughter’s who had a glazed ham. It was perfect! It’s a great combo with ham and some baby peas on the side.
