Looks similar to enchiladas Suiza‘s, an all-time favorite. I would sub out the mozzarella for Swiss cheese and maybe thin out the sauce a bit. What a fabulous recipe though all in all!

I love this show, but I happen to be Mexican and having enchiladas not soaked in the sauce just doesn’t make sense. I would call those taquitos
