the green sauce in Mexico they used is a salsa made from boiled jalapenos, blended with oil, which emulsifies. you need a salsa on that taco!
I wish you would do a series on the unique food of Guatemala. They have many dishes with the same name as Mexican dishes but their versions are significantly different than Mexican cuisine.
Ok no… i get the whole thing about doing things different but… no , stop adding cumin to every single thing and calling It Mexican food :/

I like to use lime juice rather than vinegar in the salsa. A little sugar balances it out and brings out the flavor too. Go easy on the cumin (yuch!).
"Oaxacan Pizza?" Jesus dude. Don't. Right after mispronouncing La Olla, her restaurant. Also the host needs to learn to not talk over people.
