Tbh there's many reasons why you might not want to heavily season the meat, it means you can use the meat for many different types of dishes and season it accordingly.
I think the video was more about technique than creating any complete recipe perhaps. But honestly there's nothing wrong with the flavour of good plain pork! 😋
