    Millets are special amongst grains as they are nutritious, gluten-free, non-sticky and non-acid-forming, and are slowly becoming one of the new ‘Superfoods’. For those who are health conscious and wary about what they eat, experts suggest that millets should be a part of their daily regular diet. Little Millet, one of the small millets, is called kutki in Hindi, is suitable for people of all age groups and is a good source of potent antioxidants.
    Have made Dosa out of Little Millets, specially for my viewers. Hope you try it.
    Ingredients
    • 2 cups of Llittle Millets (Kutki)
    • 1 cup of Urad Dal
    • 1 tablespoon of gram dal
    • 1 tsp of fenugreek seeds (methi)
    • ½ cup of Poha/flattened rice.
    • Salt to taste
    • Ghee for drizzling
    Method
    • In a large bowl, add little millets, urad dal, gram dal and methi seeds. Add water and wash in several changes of water till water runs clear.
    • Soak for 7-8 hours.
    • After well soaked, the ingredients will look slightly puffy. Drain the water.
    • Soak Poha for about one hour, drain and grind to a fine paste. Keep aside in a large bowl.
    • Blend the soaked Little Millets, Dals and Fenugreek seeds to a fine paste with a little water.
    • Add the batter to the ground Poha and mix well. Cover and keep aside for fermentation for 10 to 12 hours.
    • After 12 hours, the batter would be fermented and would have doubled in size.
    • Add salt to taste, little water and make it into a thick pouring consistency and mix well.
    • Heat a dosa pan. When it is hot, sprinkle some water on it. It should form bubbles and evaporate quickly.
    • Pour a ladle of dosa batter and spread it in a circular motion to form a thin dosa.
    • Drizzle a tsp ghee around the dosa and cook the dosa on medium low flame.
    • When the dosa has cooked a bit, make a slit with a knife from center of Dosa to edge.
    • When the dosa is brownish, slightly raise the dosa with a flat-ladle and roll the edge of the slit side to a cone shape as shown.
    • Make dosas similarly with the remaining batter.
    • Serve with chutney or Sambar of your choice.
