Back in the old days before pressure canners were common place..folks pickled a LOT of vegetables..or dried them..so meals would consist of a lot of root veggies and squashes and turnips..the rest would be pickled..and set out at every meal when there was not much more than meat and potatoes!
You’re right those colors are absolutely beautiful. When I was pregnant with my first child, I craved a mix similar to this. It consisted of carrots, celery ,onions,cauliflower and peppers. I sure could use a jar about now.
You could always make more if you are not hurting and gather everything up. If you make more up please wait for a good day to make it. By the way I love you hair.

YUM,..I love pickled vegetables, I can mine with. cauliflower, broccoli, carrots,celery, red/green bell pepper, Non hot jalapeno peppers,baby onions,garlic,. and I put sprigs of dill in mine,..from our garden but cauliflower/broccoli/celery..but I will put the green beans and corn in this time,..God blessed us with bounty full gardens this year again,..and we share w/our neighbors and our family,..and we do the farmers market too,..I just canned some Jalapeno Cowboy Candy but with our "fooled you" jalapeno peppers,..these are the kind that are not hot...Love your recipes/videos,..please keep them coming,..Take care,...Debbie

That looks fantastic and easy to make!!! It looks very similar to Pickle Lily without the cucumbers. I think my grandma used sweet banana peppers and hot cherry peppers in hers along with her own blend of sweet pickle spices. I'll have to try your recipe. Thank You and Much Love!

Now, would the USDA have a problem wih the corn and cob chunks being too big to process safely? Have you seen any feedback on that? Are there other pickled "sliced corn on cob" recipes out there? Yes as I said..I got this recipe off a recipe sight..and tweaked it to our taste! There is enough vinegar in her to not be an issue..especially with the corn in slices!

She was full blooded Cherokee and had hair down to her feet! Literally! She'd lean over and whip her hair up in a braided bun in what seemed like 2 seconds she was so fast. She was a brilliant beautiful woman! Much like yourself! Any who...she used to make this but she called it chow chow I think. I just know I'd bash all of the cauliflower (and I do mean ALL) it was so good! Thanks so much for this, the recipe and the memory. You totally rock! I think you should try her on sweet pepper, grean beans, and cauliflower too... you may have a vega-dog :)))) I make these... without the corn... I'm thinking my son just might like the corn, might get him to try them. I love fall, but I also love late summer, so much pickling and beautiful flavors to can up for winter goodness.
Not that you should show all of your pantry, but when you get them done, a picture of all the goodies on the shelves with their colors and diversity would be great... If you think about it.. they are usually the colors of autumn...reds, orange, yellows/gold..with greens here and there. Hey.. some of my best color combinations come from looking at stuff like that :)))
make sure you video the corn on the cob id love to see what it looks like, if you can cut it with a fork, you know, like texture wise after its pickled ive never seen that. i love just eating a whole jar of these but their expensive and heavy to buy...lol. they were so pretty thank you mrs v;)
So, what do you do with your vegetable scraps? I use mine and put them in a large container of composting worms. I can then use the worm castings to add to my dirt. If some of the worms are in the dirt - then great, cause the worms help the regular dirt get better.

sure if you want you can use the same recipe that I use for my dill pickles and omit the sugar all together if you want just follow the brine recipe for the dill pickles I made
I want to make these but I am not a big fan of sweet pickles ,so I will use dill ,I assume there is nothing you have to do different other than use dill instead of sugar Right ? I always like to double check.😁 To be on the safe side thanks.
Oooh that'll be a 'party on a plate' in the depths of winter. The Italians do a similar one to this that they just call 'Garden Pickles' although it sounds so much more exciting in Italian.
these are about $5 in a grocery store for a 16 Oz jar! and they don't even have the wonderful veggie combo you do! we are not fond of green, red or yellow peppers, is there anything else I could put in its place to add that splash of color?

Made something like this last week. We call them Mixed Pickles. I love the idea of Corn in them. I made them with Beans, Onion, Carrots, Dill, Cauliflower lot's of Garlic and Green Tomatoes. Love to have them in Winter with fresh Bread and a cold Roast. Thank you for sharing your Version with us.

whenever I buy jardinera I always pick out all the cauliflower. :-)
