    Funny to see your dogs,waiting for TURKEY!!! When my WIFE COOKS,one dog stays at the far end of the Kitchen,the other goes into the Dining Room and waits by my chair.The cat never comes down stairs unless SHE SMELLS TURKEY,Then IT'S ON.She goes from A Scared Cat,THAT AVOIDS THE DOGS, TO A LION!!! SHE'LL FIGHT THE DOGS FOR TURKEY!!!

    I can always count on you to tell how to do something or for giving me a much needed refresher for something I haven't done in a year. I accidentally hit send before the video was over. But I had to edit it. I didn't look at the date to begin with but when I saw the cute little black and white dog I thought, "thats not Gracie." Then I looked at the date.

    Thanks for the broth in the jar trick. I always heat my turkey up again and it makes more dishes,more mess and less room on the stove top. I always use leftovers from one of my holiday meals and never have enough room in my freezer to take advantage of those great after holiday sales on fresh turkeys. I never thought to pressure cook it and jar it up. Turkey is probably my favorite canned meat. Thanks for all you teach us!!!

    I've been doing this for two years now. Love it. I don't throw the onion peel away though. It gives the broth a beautiful color.

    I love that pinging noise as well. It means "good job, success" ! Been pinging around here for 4 days! Blackberry jelly, Chicken soup and stock, corn relish, Pixie oranges! Next up our fave Beets!

    I am glad I found this. I have had a turkey in my freezer for ages but I never have room to thaw it out to get it canned up. Now I know how to get that thing out of the freezer :)

    you know the ends of the onions can be frozen and then put in a spice sock and drop into easter or stock for a veggie soup. gives a lot of flavor in your food.

    Perfect timing for this video! I just started pressure canning a couple of weeks ago and I am addicted! I have been canning everything in sight! I decided to can most of what is in my deep freeze and have 3 turkeys that I was planning on canning. So, as I said, perfect timing! I will do some as you did but I think that I will also grind some up and can it like I have my ground beef. Ground turkey is so expensive now! It used to be poor peoples meat years ago (we ate a lot of it when my kids were young). Thanks again!

    This is it exactly! I have a 25 pound turkey that was supposed to be Christmas dinner but never made it due to a family emergency. We’re a small group, so not enough opportunities come up to cook one this size. He’s getting old, so we are off to the canner today! Thank you for laying the groundwork. It never even occurred to me to pressure can the turkey first, but I’m going to try it. Wish me luck!

      Jewel Clark Pardon the pun but I chickened out. I did it in the roaster. I made up ten meals of turkey, stuffing and gravy for the freezer. Ten containers of turkey soup and two things of turkey stock. Next week though, I am going to do chicken thighs in the pressure canner.

    I just pressure cooked a 9.5 lb turkey, not to can, but to get broth and debone the turkey to vacuum seal and freeze. The turkey had been in the deep freeze and needed to be eaten. Well, it cooked up nice and tender. I got a ton of broth. The meat fell of the bones. The meat and broth are in the frig cooling. Thank you for the video.

    I pressure cook turkey, too, while one is on the smoker I'll pressure cook one, but not as long as you do. I can the meat with water as it still makes it's own broth and can the cooking liquid separate to get another meal out of it. It's so delicious.

    Tried pressure cooking an 11# turkey per your video. It came out moist and fall off the bone. Canned up the proceeds this morning. 4 pints broth, 5 pints turkey. The rest went into making a pot of turkey soup.

    Im not a big fan of spending energy on sterilizing a jar or lid that is going in pressure canner anyway at 90 minutes. But this video was excellent. Nice job!

    I too can it like that, so much better. Usually after the holidays when the stores run clearance sales on them I'll buy a few and can them up like this. Nothing like having quick canned meat ready to heat up in minutes and serve or add to other recipes. Bone broth is another thing I can up to have on hand, great for anyone who has aching joints. Drink it instead of that morning cuppa.

    I bought 10 ten pound turkeys at 50 cents a pound at Walmart this year. Thanks to the crappy lids now, I bought some Tater lids in hopes that the turkey will be able to last longer then a year for me. Thanks for the Video.

      I got my turkeys at 25 cents a pound i did a turkey last week and doing two more this week. So happy i tasted it plain no salt or anything and it was amazing. I had one seal fail and i am glad it did because it was amazing and inspired me to do another batch this time a full canner.

    Have you every tried re-doing the bones etc with fresh veggies & seasonings a 2nd time (as the French do) ? I hear that especially when done in the pressure cooker/ canner that it comes out excellent

    I have about 10 pounds of ground beef in the freezer that was given to me (I think it might have defrosted a little), and is starting to turn a little white on the outside... Can I save this by canning it up? P.S... Thanks to you, I have really been enjoying having hot packed ground beef in the pantry. So nice to have ready, no thawing, browning, planning, etc. Just there and ready to go. Best canning advice ever 😇 Blessings.

    I am at a 10 lb elevation. I have the same mirro canner as used in this video. When l adjust my heat l only get a screaming blast of steam release once a min for about 10 -15 seconds then no further movement until the next min and boy is it noisey.
    I'm not sure if l have the wrong 1/2 of the rounded weight on or what's going on. I can't get it to jiggle on my gas stove. If l adjust the heat the tiniest bit it stops completely. Do you have any ideas or maybe a close up of the weight at 10lbd would help me.

      you should turn in down slowly once you get that first BLAST...that vigorous jiggle should not last 10-15 seconds...it should last about 2 -3 seconds at most. and every 10-15 minutes a part. That gentle rock motion is almost impossible to get with these canners. Hope this helps!

      Yes there are concerns. Not so much for low acid foods such as this. I would not use to to cook everyday. And Never would I use it to cook tomatoes.

      So that the who shooting match comes up to temp together..and that helps get the nutrients from the bone outward.

    Because of you (and katzcradul too), I started dehydrating vegetables with success.
    Now....I just got second hand pressure canner 3 days ago, and would like to "do" a duck but... I don't know if the same rules apply as for the turkey you have showed in this video?
    It's so hot now, and I don't want to use the oven but have (want) to make meals for our dog (yeah, I know, I know. Irrelevant perhaps but, what the heck. I "gave birth" to him and I need to know :-))

      Duck cans the same as poultry..UNLESS you are doing it BONE in then the processing time is shorter.

    Need your expertise! We have 6 turkeys in the freezer that I must be pressure canned. Can I grind the cooked meat rather than cutting into chunks then dry can it? Would you add broth to it or would it disintegrate during canning process? We don't want dry meat. We use more ground meat than chunk for taco's, casseroles and sauces. Appreciate any advice.       NOPE! I still do it this way..now I add a carrot and I leave the skins on the onion and garlic, a bay leaf, peppercorns, and 1-2 tbs of salt.

    On the second pressure canning of the turkey in the jars why should the jars be put in the pressure canner for 75 minutes for pints and 95 minutes for quarts? The turkey is already cooked, I would think it could be less time in the canner for the jars.

      It is not so much that the meat is cooked as it is preventing spoilage. Those times are what is required to destroy the spores of the bugs that cause botulism. You could in fact can turkey raw and process per schedule, the times would be the same either way.
      The advantage of cooking is it firms up the meat, makes the bird easier to pick clean and produces an excellent broth that you would not get just raw packing.

    so we process for 95 minutes then again after turning it down for 90 more minutes? Or am I getting the time wrong lol.

      You Process the whole turkey for 90 minutes then again when in the jars.

    I raw feed my dogs and receive freezer burnt meats all the time. Now I have no room in freezer for the gifts of turkey's I'm receiving tomorrow...found this video at the perfect time...we will be canning them all and adding to the pantry to use over winter months.

    Mrs.Volfie thank you so much for sharing this one..i found it very informative. .can't wait to do this. I do have a question about the broth..i have made broth several times and was worried about the jellied look..but your was the same..what makes it like that..and it is a good thing right? If it is not jellied is something wrong? .I have had it turn out both ways..thank you very much for your help♡♡♡ I think you are just wonderful : )

      Crystal Wengenroth The jelly comes from the bones and cartilage...It is not always there ( if your meat is boneless sometimes it will be less...but YES it is a good and healthy thing!

      Another site recommended freezing the bone broth to keep it from "cracking"..It loses its gelatinous texture by heating it multiple times..Its still good but some of the gelatin benefits are lost.. By canning it you put the broth through another heating process..Freezing it preserves the gelatin.. just don't reheat the broth above boiling when you prepare the broth for soups

    Hi Mrs. Volfie. I heard that you pressure cooked that turkey for 95 minutes. Is that right? I pressure cook 22 lb Butterball turkeys (the biggest I can fit in my pressure cooker) for 40 minutes, let it de-pressurize on it's own, and it looks like it came out of the oven, accept for browning. Why 95 minutes? That would dry the meat right off the leg bones.

      +chivone21 I put is a gallon of water..the turkey starts from frozen and I add veggies for flavour..and YES the meat falls off the bone..but it is far from dry! I am assuming you did not watch the whole video..or you would have seen how moist and juicy this bird was when it finished processing.

      As long as it is well wrapped..for at least a year..if it is shrink wrapped..longer!

    If you made a cheese cloth sling it's easier to get out of the cooker.

    Love the video just one question, just one question, was you cooking time so long because the turkey was still frozen or would the time have been shorter if the turkey was completely thawed?

      Just Sew Trish because it heats the whole bird at the same time..rather than starting with the outside..it also helps pull tthe nutrients from the bone.

    Hi! I am a new canner and this video is the most exciting idea I have seen yet. As soon as I can find a source for an organic turkey, I am going to do this. Quick question: can I break the bones and use them from the pressure cooked turkey to make more stock on the stove top or does pressure cooking the bird release all that good inner bone stuff.
