    Just rewatched this again. Taku, YOURE not only a great FISHERMAN and CHEF, but you're also a great TEACHER. The "student" subscriber that did the fillet job did such an AWESOME job man. I fillet fish pretty well, but I've also learned something about processing fish watching your videos. I use a Rapala fillet knife, but I need to step up my game and get me a nice Chefs Knife. Great Video as always TAKU,.🍻 CHEERS FROM THE 416 IN TORONTO 🍻

    Hey man, I don’t usually comment but I just wanted to say I’ve been a fan for a long time but I just recently got back into your videos. It’s such a nice change of pace to the whole hustle and bustle that seems to encompass the internet these days. Just some good people enjoying good fishing and good food. It’s the simple things in life! Your videos do a great job at reminding me of that. Have fun on your trip! Japan is #1 on my list of places to visit. Seems like a great place and I’ve always had a thing for (probably heavily americanized) Japanese food.

    I live in KY. I have a cousin who married a Japanese girl. They used to live in Osaka and moved to the mainland. He took over a abandon home on a mountain. He is the crazy guy in the family. His honeymoon he horse backed thru Mongolia for a month. Great video!

    I never get tired of watching you clean and filet the fish. You do an excellent job of explaining and showing us how to do it. I will definitely do a better job next time I give it a try. You must admit you make it look so easy. I know it took a lot of practice. Also the knife has to be really sharp. Any way thanks for showing us some aspects of Japan . The bento boxes look so nice.     Excellent video from Japan! Taku’s filleting technique is flawless due to years of professional practice. It’s harder to do than it looks.
    Fishing in Hawaii for decades, it’s tradition to give away lots of our fish to neighbors and friends. We caught mostly Mahi Mahi, Ono, Aku, and Ahi. Aku (Skipjack tuna), we’d give away whole. The rest we’d fillet and put in gallon ziplock bags to pass out to neighbors.
    We usually caught way more than we could eat, and freezing fish is frowned upon in Hawaii. Fresh off the boat is the way to go. What you can’t eat fresh, you give away so that everyone can eat it fresh off the boat. If a neighbor got more fresh fish than they could eat, they’d call family or friends to come get some. It’s never frozen for later. That’s the rules.
    A huge Japanese population and influence in Hawaii, we adopted their styles of fishing and love for sashimi and rice.
    Depending on how many fish we caught, the fish was divided evenly between my friend, (the captain) and me, (first mate). We were fishing partners, not many wanted to go 40 miles out to sea in rough channel waters with us so we had no “guests” on board, just us two.
    Sometimes we’d spend hours cleaning fish and since he didn’t particularly like fish (strange for a professional fisherman), he’d fillet his fish very professionally and give it all away. I love fish but have a particular fondness for the bone meat. So when I filleted my fish I’d purposely leave lots of meat on the bone. Maybe keep a few fillets for me and my girlfriend and give the rest of the fillets away as well. While cooking both the fillets and bone meat side by side in a pan, my girlfriend grew more fond of the bone meat than the fillets. (She understood) The reason is, the meat closest to the bone has a texture like crab and the meat on any animal is better tasting closer to the bone. (When cooked anyway) And it’s a different eating experience. It’s not wolfing down huge chunks of meat, it’s more like picking tiny morsels with chopsticks. Like picking at crab meat, every bit is a delectable delicacy. It’s a fun and rewarding experience. So, I’d give most my fish away, but save the bone with plenty meat on it for us to enjoy.
    Dipping pieces of hard-won bone meat in drawn garlic-butter is a whole lot like a crab feast. Every little piece means something and you have to work at it a little bit. We enjoyed the whole trip of it.
    I can fillet a fish almost as good as Taku but usually choose not to. That bone meat. Man that’s good!

    Man, your knife skills are beyond awesome. I had some sashimi today and it was good but they cut it at least 1/2” thick. I prefer the thinner stuff like you do. The food looked so good.

    I wanted to thank you for the yet another lesson on filleting fish. I've been filleting fish for 50 years, but was never that good at it. Last week I caught a 16" Pompano, and per your instructions had near perfect fillets in a pan in under an hour from time of catch. You might consider the Florida Panhandle on a future catch and cook adventure!

      He calls them snapper in English. Could be red snapper/bream 'madai' or Australasian snapper/sliver sea bream 'Goushu-madai'

    Basic knife skills, cooking skills, eating skills- should be taught in shool everywhere. We had "cooking classes" in middle school, that taught about 50% how to boil potatoes and roots. Some say you should learn from your parents, but parents vary extremely in knowlege on "the big three"- Food- Economy- Trade(not selling and buying).
