    Recipe for Tropézienne with Crème Diplomate, a soft and melting brioche, flavored with orange blossom and generously garnished with a creamy vanilla diplomat cream. A delicious, unmissable dessert in France.
    INGREDIENTS:
    For the Brioche:
    30 g of lukewarm milk
    10 g of baker's yeast
    250g of flour
    30 g of sugar
    3 g of salt
    2 eggs (100 g)
    1 teaspoon of orange blossom water extract
    125 g of butter
    For the Diplomate Cream:
    250 ml of milk
    2 g of gelatin leaves
    3 egg yolks
    60 g of sugar
    25 g of Maïzena (cornstarch)
    1 tablespoon of Vanilla
    20 g of butter
    180 g of whipping cream
    For the Syrup:
    80 g of water
    40 g of sugar
    2 tablespoons of orange blossom water
