- The time is flying by so fast. Lots of tomatoes coming out the gardens. It's time to start canning my marinated cherry tomatoes. It's my favorite way to preserve my cherry tomatoes. In this 1st preservation video, will be roasting, peeling, and freezing the larger tomatoes so we have them later to make spaghetti sauces as well canning up my marinated cherry tomatoes. Roasting, peeling, and freezing large tomatoes - you will need a cutting board, knife, cookie sheet with or without parchment paper, freezer bag of your choice.
Instructions - pre heat oven to 350, cut the top off the tomatoes, score an "X" on the bottom of the tomato, place on cookie sheet X side up. Once sheet is full, add salt and pepper. Roast in oven for 20 to 25 minutes. When done, take them out, let the cool completely, then remove skin, place in bag and freeze.

They are. I eat it on toasted baguette that I’ve put some olive on, toasted, then rub toast with fresh garlic, and top with marinated tomatoes. You can take it up a notch by adding some whipped cream cheese or goat cheese, it’s delicious!

When I can tomatoes I put an x on the bottom blanch then put into cold water and peel them. Easy peasy.

My mother also turned her jars upside down and covered. And no, no Italian in us.😂
That’s an excellent way to remove the skin. I also like freezing them while, once thawed the skin peels right off.
You’re going to love marinaded cherry tomatoes. I eat mine on a nice slices of toasted bread. I drizzle olive oil, bake until crispy, rub with a fresh garlic clove, and then top with the marinade tomatoes. It’s so good.
I honestly believe it was a very common practice for our mothers and grandmothers who canned to turn the jars upside down, and cover 😉.

This is perfect, I have so many cherry tomatoes I need to do something with. Would it hurt it to water bath can for longer, or to make this in a pressure canner?
You can do either. I was using small jars, but if your doing larger, water bath longer for at least 20-25 minutes. I've never pressure canned them, but I am sure if you follow pressure canning guidelines for tomatoes it would be fine.
Yummy. Between me and the boys we eat all our tomatoes fresh plus it has been a rough year for my cherry tomatoes specifically and tomatoes in general. I might try a little in the refrigerator if I get any extra.
My boys hate fresh tomatoes, lol. If it's not spaghetti sauce or ketchup they won't touch it, lol.
We've had big challenges with spidermites this year. We also had those tomato worms. First year that has ever happened, lol.
@@WheretheYoCalsGrow horn worms showed up in July last year, for The 1st time generic green caterpillars have been eating inside the tomatoes not just the leaves! And my boys fight over how many can they keep as pets🤦. Keep going🙂, we met over the 1k challenge. I'm finding difficulty standing in front of the camera again to do a garden tour.
@@marilynrafla6628 yes ma'am I remember meeting at the 1k challenge. Those green caterpillars eating inside the tomatoes are the tomato worm. I lost my first tomatoes to them. Once I figured it out, my baby girls had yummy treats 😉

Leo your cherry tomatoes on a plate put a plate over the top of it and then run your knife through them that'll split them. That cuts your time right in half

You’re welcome! Add 5 minutes. You’re not trying to cook the tomatoes, just want to seal them.
I want to try making the bruschetta to can as you did, how lobg do i process them in the canner... bruschetta is one of those luxurious things i love to make on special occasions for my family....um on garlic toasted diagonally cut baguette....yum
I processed them for 10 minutes in 1/2 pint jars. If you use pint jars added 5 mins. Remember you’re just sealing the jars, not cooking the tomatoes 😉🤗❤️

is this only 10 minutes according to the altitude where you live? I'm in the Northeast upstate NY...I do have the Ball Book of preserving so I'm referencing that as well, I'm only 2nd year canning & I LOVE PRESERVING FOOD:) thanks for sharing...
They’re is no altitude here. Where I live it basically on a flat concrete surface. I am water bathing canning in this video, not pressure canning 😉.
I believe your altitude comes into play with pressure canning. I have not done much pressure canning, so I may be wrong.
I can honestly say, with water bath canning I’ve never worried about it. Not sure if that answers your question or confused you.

Hello. I did mention in this video I was roasting, peeling, and freezing tomatoes to make spaghetti sauce later in a different video. Unfortunately, due to computer failure (me not backing up files), I lost that video among others . I bought a new computer and a backup external hard drive. So, hopefully that will not happen again. But, if you are requesting it, I still have frozen tomatoes that I can still make more spaghetti sauce. They need to get out of the freezer anyway. So, give me until next Monday and I'll re-film and upload for you. Will that work?

Can you leave the tomatoes whole?
Yes, you certainly could use whole cherry tomatoes or small tomatoes. We use our on toasted baguettes with whipped goat cheese, so I prefer them sliced.

@@moniquemonica695 if you water bath can them, you can put them on the shelf. If not, they need to go in the fridge
Did you do a rolling boil for 10 minutes? I can’t tell.
I never do a rolling boil when water bath canning. I bring the water to just below boiling, never higher. Kinda like a low simmer. Then process for 10 mins. Hope that helps to answer your question.

@@WheretheYoCalsGrow Newbie here and reading about botulism is very scary, I heard a whole family died from botulism eating homemade canned food. 10 mins is enough simmering not rolling boil? Is botulism the cause of jars not sealing? Also your jars have to be hot before you fill them?

So that 1tsp of lemon juice is enough acidity for the tomatoes with oil? I want to do this recipe, but it always scares me canning tomatoes.
If you go bigger than a pint, add more. I use 1 tsp per jar. Also, you could freeze it or put it in the fridge. I wish I could post a picture. I still have 2 jars left. If you wanted to, you could add 2 tsp. I do not think it would change the taste.
There is also vinegar in this recipe.
