Love this video! Can't wait to try the fermenting recipe. For dehydrating- if you use oil, the food won't store as long. It can go rancid. So if you want to preserve it for the long haul, skip the oil and just add herbs! :)
Agreed! Skip the oil in the beginning and add it later for “SUNDRIED” tomatoes 😊

I do t use oil when I dehydrate. I let them dehydrate plain and longer so they are a little crispy. That way I can store them dry and rehydrate when cooking. The ones I dehydrate like a raisin consistency I put in oil. But I wouldn’t put oil on them to dehydrate them. Seasoning is ok.
My favorite way to use up tomatoes is roasted. yumm! If you skip the olive oil in the dehydrated tomatoes, they would be shelf stable if stored airtight. The olive oil can trap bacteria.
That's right. Last year's dehydrated cherry tomatoes lasted until I was transplanting more this year!
I have canned my cherry tomatoes with garlic and rosemary and they taste delicious! They, surprisingly, taste like A-1 steak sauce!

You should try one sheet of paper on the bottom of the dehydrator. It will improve air flow and speed up drying. The racks can go in the dishwasher so clean up will still be easy. Nice tip on the fermenting 🍻

Recently did the zucchini pickle with basil (I think in Sandoor Katz' book) and WOW. That really is amazing. I did this tomato/basil ferment a few years ago and they were good for about 2 yrs in the fridge. I had a lot of ferments that year and it took that long as good as they are! I also did zucchini kraut in that Fermenting Vegetables book and that is also a real winner!

Looked amazing! I will make some of those but I have to stop eating the tomatoes outside in the garden 😁. I planted less than usual so Now I know to plant my usual next year.
You may definitely not want to do this if you want your tomatoes cut exactly in half but if you take two Deli Lids or Lids from something else plastic lids put the tomatoes in one and put the other lid on top you can take your knife and run it right down the center and you've got them all cut and you don't have to handle them singly. Just a suggestion. A lot of people want to actually have symmetry in their cut tomatoes. Me, I don't really care as long as I can get them in my mouth. This will only work with cherry tomatoes of pretty much any size that you can get between the lids. Be well, stay safe, ferment on, love from Texas

I probably should have got that book before I tried to ferment a few weeks ago. Ended up in the hospital from salmonella! So PSA, take EVERY safety precaution if fermenting!

Girl I'm gonna send you a colander for washin those tomatoes! 😂Last year we had so many cherry tomatoes we couldn't eat them all quick enough so our friends and family enjoyed many brown paper lunch bags full of them. We'll definitely be trying these recipes out this year...I just ordered that book!

@@jfkuenHad a big haul of these this year and just found this video. I'm glad someone mentioned it too. I'm thinking they must have a well, because that is too much water wasted for a half handful of tomatoes.

I actually ferment green tomatoes for fresh salsa throughout the winter. They hold up great to fermenting and a great way to use unripe tomatoes that are going to get killed by a frost. Super ripe ones will indeed explode when you try to take them out of the jar lol
You can pull up tomato plants that still have unripe tomatoes on them if it is going to frost, and you can hang them inside to get the tomatoes to ripen on the vine.
@@Teelier Fermented green tomatoes is a staple in our house so we are totally fine with not ripening the last ones of the season. :)

I make a roasted cherry tomato pizza sauce with ours!
This works well in your oven too -- 200 degrees on a cookie sheet. Then I freeze mine in glass containers.

My family doesn't care much for the dehydrated or the sun dried tomatoes that type thing but those cherry bombs look like they might be a thing I may try a batch of those thank you for sharing

I have been fermenting stuff for about a year or more. Ive tried over and over in the minimum salt even and they just keep tasting so salty no one eats it in my family. I have followed recipes joined groups. Im so frustrated cause I really want to! Ive even shorted it to the least amount of time. But Im excited about the idea of the oil one, definitely going to try it when my tomatoes are ready!

I’ll try and get all the moisture out of mine and then I just vacuum seal them in jars for the fliptop jars and I have tomatoes from 2020 that are still perfectly dry and not moldy experiment I wanna see how long a few of them will last up and using down for over two years

Ive never had much luck with fermenting. I follow directions but always seem to grow mould! I am meticulous about making sure there are no bits of anything floating at the top. Just wondering how you would keep powdered spices from floating and I noticed your bits of garlic floating in your pretty new jars. How is it that the slightest bit of food at the top makes mine go mouldy and yet you have heaps of bits and pieces floating around the top and yours is fine? lol. Any tips would be much appreciated. Loved your video ❤
Great question. Most all of mine grow mold if there is anything floating at the top and that's normal. I just scrape the mold off before storing in the refrigerator

You didn’t add any Vinegar of any kind to the fermented Cherry Bombs I thought all fermentation used Vinegar on one way or another?? That’s one the hardest things for me is the vinegar taste…Loved this Video! Take Care Bless you and family.. Sheila

You may want to taste test them sooner, especially if they're ripe. At least that was my experience.

Do you poke a hole in the tomatoes for fermenting? Also another way is flash freezing then putting in ziploc bags to use during the year.

Does the parchment paper cut down on the air flow? Maybe lining the bottom would of the dehydrator would permit better air flow?

After dehydrating and then covering with oil and leave on shelf how come you have to refrigerate after opening if still. Under oil?

Does fermenting get rid of the toughness of the tomato skins? I never know how to save my cherry tomatoes because no one likes eating the skins like when I make pasta sauce.
I blend mine up in the blender and it gets smooth enough to not notice them.

I just fermented pickles are they suppose look really cloudy?
Same here. In this video she did say that the brine would turn cloudy that it was normal. I did some research and it says it will be cloudy and as long as there is no mold it is good to go.

I wish I could use my dehydrator in the heat of summer but I just can't stand heating up my kitchen that much for so long. It kills me!

@@staceystrukel1917 Doesn't work well when its humid outside. Just makes the machine work against the humidity and doesn't get the job done well at all. If it was really dry outside that would be a decent option though.
