I dice some potatoes and onions and fry in small amount of olive oil until brown and soft. Use this as your taco filling. Use the usual other ingredients that you would for standard tacos. Cheese, lettuce tomato, sour cream and avacados, salsa. They are so good.

I also cook in large batches as you suggested and then I freeze the left overs for future dinners.
Home made enchilada sauce is also easy and tastes better. There’s a good video by a Mexican lady on RUclips for green chili enchiladas made with tomatillo’s and poblano peppers. I can find it for you if you like. You would love it. So full of flavor

I shop at either our local grocery store or Walmart (it is cheaper). I don't buy water bottles. Our tap water is good drinking water and I use metal water bottles. When I shop, I stick to whole foods.

Because she’s calling it “mole.”However just because chocolate is added does NOT make it mole, not even close! 🤦🏻♀️ Mole is a very complicated sauce, over 25 ingredients (chocolate being 1 of them), takes hours to make and is steeped in deep tradition. True mole is so much more than just chocolate squares. Her recipe is chocolate chili.

Nice recipes! Never had mole chili, sounds yummy! To stretch my budget and add more veggies, I'll add celery and carrots to the mix and serve over mashed potatoes. Why do you recommend rinsing canned beans? I never do and don't mind the results. Seems like there's nutrients and flavor in the liquid. Is it because of salt? I don't have high blood pressure and cook mostly from scratch, so I worry more about not getting enough, especially in hot weather. TFS
I love your idea of stretching the meal by adding more veggies! I chose to rinse the beans to reduce added salt and extra water. It is up to your personal preference.

I don't like meat and tend to eat more fish. I wish I was as calm as you Connie ! I feel nothing but a bundle of stress all the time, despite walking, I am looking for. Work too (also stressful) I can't work full time due to health issues (added stress)

The Chili is delicious, I hope you like it. You must be a chef to identify the Al-Clad pots. My ex-husband gave them to me 28 years ago, in hopes I would learn how to cook.😜 I guess it worked.
I don't understand what you said at the beginning, you don't eat meat you just take out the pieces. You do realize you are still eating the meat with the renderings, all of that is infused in the vegetables and rice. I used to work with a woman many years ago who she referred to herself as a vegetarian and would order beef stew and take out the beef from the stew and eat the rest, lol I said hun you are still eating the animal! and on top of that she would wear suede and leather, it was the 80's.

Food bought canned food r preserved with harmful chemicals, unless u canned your own food with three basic ingredients, canned food is out of question for me and those who like to eat healthy food, 99% of supermarket bought food or fast food r a killer. U don’t have to take my word for it just check with most health minded nutritionists they most likely back my statements up. At the end of the day, to each is own, u can lead a horse to water but, # # # # # #.

I substitute, ground beef or brown lentils, and then add in the taco seasonings to the brown lentils. Taste delicious.

What is that pot made of ? Please don’t tell me it’s aluminum.
The pot is copper and stainless steel.
