Feeling GOOD?! Eating BETTER!
Perfect time to grill a Parmesan crusted steak using the reverse sear grilling method with my @MEATER thermometer 💨 🔥
The below recipe for the Parmesan crust is enough for one huge tomahawk steak. I suggest to multiple each ingredient by the number of steaks you are cooking.
Parmesan Crust
1/2 cup freshly grated Parmesan cheese
4 tbsp mayo
1 head roasted garlic
1 tbsp old style mustard
1 tsp dried parsley
1 tsp sauge
1/2 tsp black pepper
Reverse Sear Steak
Let your tomahawk steak rest at room temp for at least 30 minutes
Season generously with salt and pepper
Smoke & cook your steak on indirect heat at 250-275F
Once you reach about 15 degrees from your desired internal temp (115F for medium/rare), pull your steak off the grill and let it rest at least 10minutes. I am using the great @MEATER thermometer here, it’s so easy to use and always have the perfect meat.
I used a very hot cast iron skillet for this cook but you can use any grill or oven.
In any case, crank up your grill temp to perfectly seared the steak.
Put your steak back to the grill, over the direct heat, until your steak is perfectly seared. If you do the parmesan crusted steak, you can seat only one side.
Once your steak is fully seared, top your steak with the Parmesan crust mixture. If you are not using a pizza oven like I did or a pre heated cast iron skillet; place the steak on a cast iron plate and put it in your oven on broil until you have a nice golden crown crusted cheesy top.
So happy you picked up the bone at the end. Touched my heart. Lol
