    I've been watching Sorted for over 10 years and can confidently say that putting Kush in front of the camera is one of the best decisions Sorted has ever made.

      Totally agree. This series is a goldmine of great cooking knowledge and tips, and it's presented so charmingly with two great hosts, one of which asking questions people like us (normals) would totally want to know. This is the kind of show that would get great audiences on tv. Love it

    I think it's a bit of a slept on topic- storage. A master class on things like FIFO, labeling, uniformity of storage vessels, etc would be a really cool masterclass. As a guy who worked in food for ages, my refrigerator and pantry are night and day different from people who didn't. All of my stuff is stored in either glass air-tight containers, Cambros, or deli cups. Everything stacks, is modular, and is most importantly clear.

      +1 to this. A video on storage would kill.
      I store everything in small, medium, and large deli containers. And I have a roll of blue painter's tape and a sharpie on magnets on my fridge. It makes my life SOOOO much easier. I cannot stand cooking in other people's kitchens or when people try to "help" me organize mine.

    It reminds me of your old old videos, where Ben taught college kids to cook their first meals! Now, here is Kush teaching adults with some years of adulting under their belt, how to reach the next level in cooking!

      @@mustwereallydothisfortunately for us, Kush wasn’t chosen too long. I think it was maybe six months after he joined (which was three years ago now I suppose!) before he started popping up in videos.

      ​@@mustwereallydothis the funniest thing (which kush brought up in his under the cloche interview) is that kush was all for being thrown in front of the camera from the day dot, but the boys were worried he was going to be like james and be scared off if they threw on screen at him too early (james initially hated being on screen, and while he grew into the role, he preferred being behind the scenes)

I feel he is the fiery, gifted genius of Marco Pierre White of Sorted, Ebbers is the classic, informative, consistent and wise yet hilarious Fanny Craddock and James is the sarcastic, talented and more patient than he looks, Gordon Ramsay.       Would love any type of tidbit knowledge in the herb masterclass and I mean absolutely a n y t h i n g. Historical, tricks - what ever makes you (people of Sorted) go ”oh this is kinda fun”. Don’t necessarely mean deepdive into research, but anything you poS have tucked away in those noggins of yours. That would be fantastic! 🙏🏼🤗

    I love watching this series... especially as it is not simply 'showing me a recipe' but explains the how and the why of the method!...and the basic/intermediate/expert approach allow everyone to develop their cooking skills.

    I would love to see a general kitchen health master class. Some examples: how to prep for parties/gatherings, how to maintain kitchen equipment like knives/pans/clean work stations, misanplas and what can be done well in advanced to store ready to use every week. And lastly a sort of low/mid/high price point to get a kitchen up to speed (Store cupboard, spices, knifes, pans, kitchen essentials etc).
    Edit: I would also love to see sort of a "behind the scenes" on how Sorted themselves manage the work kitchen. I imagine it is run very similar to how a professional kitchen would run but with slight adjustments as your "menu" is always changing depending on the content being made.

    Brilliant. As much as I love the madness & mayhem of Sorted, I love the instructional stuff more. Three things that I feel beginner & intermediate cooks either don't think about or get right are: - #I Seasoning 🧂, #II Spicing 🌶 & #III Saucing 🍲. So Master Classes on the other two S's would be great from Kush & Ben.

    I love Mike in a student role because he is so sweet and bends over backwards to express how amazing the knowledge (and tasty results of that knowledge) is! Love you Mike. Kush is badass and hilarious as always

    I would love a chemistry/combination course. For example, you said in this video that fat is needed to bring out spices and give a fuller depth of flavor. You also mentioned needing an acid, like lime, to finish the dish. And then, in another video, you’ve explained that salt is what breaks down onions for sweetness. So a video that breaks down these basics of chemistry in the kitchen to understand why and how things go together.

    This masterclass was awesome! Kush is such a great teacher, love is slow rhythm , clear instruction and passion for his craft. But we see that he loves to share is knowledge and the presence of Mike and his curiosity is great for their back and forth question/information/discovery/tasting. bravo!

    Kush is genuinely such a great teacher. He has such a kind but non patronizing tone, and really explains things well but also gets the guys involved as a way of learning. Idk if this is something he knows he's good at or if these are learned techniques but even in when the theme of the vid isn't him trying to teach, he still has the same vibe. So it's great to see vids that ARE him specifically teaching.

    The expert tip for me was about the heating of powdered spice on low heat at the end...I used to put it together and used to get bitterness..now I know the order

      Totally agree! I always knew that you toast the spices to get the flavour, and that the whole spices go in long before the powdered, but I never knew that the heat had to be so low. It's the little things that get you every time

      It's not your fault. I'm Indian and was always taught to be super careful with powder spices because they burn easily. But on the Internet, I've seen so many recipes where they chuck powder spices into hot oil, absolutely burning them. It's frustrating that no one seems to really talk about heat control with spices, when I feel like that's the thing my grandmother emphasized the most when teaching me how to cook.
      Even the order in which you add the whole spices matters because some spices need longer or a hotter pan, so you add them first etc.

      on the flipside be careful that the pan hasn't cooled down too much, because then you'd be left with raw tasting powders that are never pleasant.

    I love the way Kush not only shows you how, but also explains all the whys. I find it so much easier to remember stuff and really understand it when someone gives me the whys and not only the how-tos. Give me all the nerdy details. That's why I love Ben and Kush so much - and Sorted Food videos.

    Awesome work from Kush, but also from Mike for asking the questions that most normal foodies would be asking!
    Huge thanks for getting around to a great breakdown of spices, especially for a look into a cuisine that i've always been interested in. Coming from north east U.S., we don't have a lot of indian cuisine around these parts.
    With all that you guys do with food preservation and preventing wastage, I would love to see another dive with Kush & Mike into ways to better make use of what most people would consider "conventional scrap" with ingredients. Rinds, stems, excess fat, etc...
    Now, before I hear a lot of "soup!", "flavored oils!", "microwave the cheese rinds!", or anything else of the sort that we've seen before or already know how to make use of, I would like to see if Kush has any tips on making use of these "scraps" in the dishes that you would already be making with the "non-scraps."
    It isn't a pain to me to keep food over from one dish to the next, or to save something in the hopes that i'll actually use it for something (rather than throwing it away...) but i'm curious if there are better ways to "WOW" the normal home cooks with incorporating these usually discarded ingredients into a dish.

    I'm a pretty new viewer, but have thoroughly enjoyed this channel and all of the content I've watched so far.
    I'm an ADHDer with zero kitchen sense, but also help my home chef in the kitchen, and this channel has not only made me more eager to learn and try harder, but I'm learning through repetition.

    Growing up in India I always took my Mom’s cooking for granted.
    Now I realise how much went into every meal she ever made.
    Kush is absolutely right, most households used to make garam masala at home (not so much nowadays) and grind spices like turmeric at home.
    And as was common in the 90s we lived in a joint family and it used to be an event. We’d make so much that it ran 4 kitchens for a month. There was so much going on in those kitchens.

    I am just loving the Kush Masterclass formats, it really brings out the other side of his skills as a chef, conveying the information in a supporting manner and letting Mike get tot he conclusion on his own is a lovely touch.     I've recently been going through and watching your older videos, in chronological order. I'm at the point where you started doing the 3 recipes, compared. I've been thinking it'd be fun for you guys to revisit that format, and explore more dishes.
    Now come to this, and realize, that's exactly what this is!! I am absolutely loving these videos! They're so much more about techniques you can use at varying levels, rather than straight up recipes to follow. I have learned sooooo much from videos like this, and I can't wait to see more!

    I really love these masterclasses! I've learned so much that I didn't know and learned new ways to do things I already knew. Definitely would love to see more of these! Definitely would love a masterclass on sauces and maybe like coating things for frying/baking like what works best for each type of cooking.

    I had a Gary Rhodes cook book that listed many recipes in this format , from basic to 5*michelin , 4/5 alternatives for each dish !! A great help for me !!!

    Finally, using tej patta (cassia leaf) rather than Mediterranean bay in an Indian recipe.
    The tandoori chicken looked similar to the way i make it although i have never added cheese and i use a slightly different blend of spices.
    Often when marinading i will thin part of the marinade and use a brine injector to ensure the flavour really goes deep into the meat. It gives a better result than scoring in my opinion.

    with tandoori chicken I like the lime onion and cucumber but I also like a few carrot sticks for the sugars and sweetness. my personal preference, but it does add a new element to the flavourings. great video, glad this is becoming a series!

    A master class on building sauces would be fantastic. I'd also love to maybe see some single ingredient classes with Kush. Eggs, chicken, pasta, garlic... anything really!

    I'll gladly watch more Masterclasses from you folks, especially with Kush! I know there are lots of food channels out there and you need your profile, but pushing the excellent recipes from your app to the front is also good content! It's a nice change from the usual fare.

    I originally started watching this channel YEARS ago to learn stuff about cooking. It's really nice to be getting back to that after a few years of focusing more on entertainment (with varying degrees of success). Kush is such a wonderful teacher. More videos like this, please.

    Watching from Cape Town, ZA and translating cumin to "jeera" and turmeric to "borrie" - same ingredients, different names. I love how spices have different names across the continents but are actually exactly the same. This mindset can solve so many problems around the world... #foodforthought

    I love to cook and watch many different chefs but what Kush brings is explaining the reason behind it which I appreciate and retain. Mike and Kush together are a great combination. :)

    I watched the expert, but the tempering and intermediate were more than enough to really boost weekly meals. This was awesome. Would be awesome to see stuff like this again, but with different cultural spices or even types of foods. For instance, this was based on chicken, it would be nice to see soup bases, etc.

    More of these! Can I suggest a masterclass on knives - which ones do I use for different tasks in the kitchen, what are the most important/useful ones to own for basic/intermediate cooking, techniques for how to use them safely and efficiently?
