I’d love to see a video where Kush does the team lunch at volume and explain all of the skills and tricks needed for working at that scale
I was thinking the same thing. We saw the normals do it so now we need to see the Head of the cooking team do it, and kush is great becuase of the way he explains things while on camera.
He did great work during the Wild Weekender, where he had two segments of, essentially, 'Kush preps team dinner while chatting food with Ebbers." The Skinny-Dipping Segment in particular was really cool, even if the approach there was basically "Make a fairly "normal" amount of 6-7 different things, so everyone just fills up on smaller portions of more stuff.
I would love to see that as a series! A video out every couple of months for example.
I’m so confused. They had enough food plus leftovers, how is that not a badge?
@sailorbrite Ben touches on it a little. Basically, the problem was that they didn't display enough "chef skills" vs "brute-forcing" the problem. They have "leftovers" in part because they made way too much mashed potatoes, meaning in a "real" kitchen that they'd be going over budget/wasting a lot of food.
For instance: while I assume Ben is being at least a little hyperbolic when he says "5 kilos of extra mashed potatoes", if he ISN'T, that's ~20 servings, meaning they almost doubled the amount of potatoes they should have cooked.
And as Ben pointed out, the potatoes were never truly seasoned, Jamie and Barry fought about if the potatoes were cooked long enough or had enough fat, all things that could and should have been calculated and prepped earlier.
Similar issues with like, burning the bottom layer of the leeks (suggesting that they cranked the stove too high to try and cook the large volume faster rather than roast them or use two pans), not realizing their pie would need something acidic earlier and cooking out the wine with the veg, etc.
It does feel comparably stricter than several other badges they've given for relatively thin results, but obviously, we can't see all the little details or taste the dishes to know how it panned out. I don't recall any discussion, positive or negative, for the broccoli, so if the overall reaction was "the pie's good, the potatoes are terrible, and the broccoli is so-so", it makes some sense to say that one true success out of 3 isn't enough to say they did well.
How you haven't thrown these three into an actual kitchen as Ben's and Kushs sous chefs as a team battle is beyond me
I want this to happen, so much.
And then after a bit of experience they can do it in other prior guests restaurants?
ooo yes
A small restaurant operation with prep work for different dishes from an A la carte menu. And then the actual cooking when orders come in.
With Gordon Ramsay as a special guest to call them donkeys.
Ah, I just love Jamie’s honesty when he gets ‘bored’ slicing stuff for too long. I forget the video but I remember him slicing veg, literally chanting to himself, “Don’t get bored. Don’t get bored. Don’t get bored…” 😅
DO NOT GET BORED 😆
Cutting veggies for the bibimbap midweek cooking...to wich he still lost :,(
@@SortedFood I always like to pretend the person replying from ur acc is ebbers it makes it ten times funnier
@@SortedFoodI’ve always wanted to know- do you have running water in that sink? You always seem to use jugs
Honestly, I find myself using that mantra whenever I’m cutting things now.
My biggest takeaway from this - I didn't realise there were 30 people in the Sorted team! So proud of you boys for how much you've grown this little channel over the years!
Same!
I said it before too, been watching them for the past 7 years. I've always admired their camaraderie because they look so happy together, they give me the feeling I'm at peace with the world.
Please, try to find 1, one single 1 hateful comment on any of their videos. It's a dare and might take ages cause I've never found one.
It does make sense I suppose. The lads on camera, the chefs (not just Kush/Slater, but those working with them), the camera and audio crew. I assume some editors, and a maintenance worker. Then you have people working on thier community efforts, the programmers and artist working on thier sorted app. People doing planning and logistics for their trips, events, and shows. Someone handling budget. Surprising, but makes sense when you think about it. Only way they could crank out so many videos all the time.
And they get a Kush cooked lunch - an excellent perk!
Really glad Jamie got recognised for doing so much of the 'boring' work, if you watch him in the background he is always working on a part of the dish or cleaning up the others mess for them etc.
"All they need to do is agree and work together" - I'm so excited to witness the chaos!!
Famous last words 😂
@@SortedFoodI KNOW!🎉🎉🎉❤❤❤😂😂😂😂
I think Baz, Jamie, and Mike took together to mean "in the same general area".
@@tiacho2893 Mike and Baz did. Jamie was actually helping constantly. He even took charge when others where flapping by making the decision.
This was an interesting one, it shows the difference between trying to scale up cooking for a family vs. working more like a prep cook. Also congrats to Jamie! At this rate Ebbers will sill be handing out badges in 2026.
Finale next, we promise 😆
@@SortedFood Can't wait!!!
@@SortedFood will it be a restaurant?
@@SortedFoodThen you'll have to level it up and let them all go for eagle scout of chefing.
@@SortedFood Please, don’t stop 😃 Love this series ❤😍
Jamie really was doing so much. Well-earned teamwork badge. He's much of the reason Mike managed his sauce badge and *should* have been the reason Barry would get a seasoning badge with how much he kept reminding him of things, despite seemingly very little of it sticking
Yeah Jamie threw another stick of butter into the mash and it was still underwhelming. I can only imagine how it would have been with even less fat in it.
In fairness to Mike, he did specifically tell Barry to salt the water for the potatoes and kept calling him over to give him the opportunity to season everything else. I'd have to watch again to see how much extra Jamie was doing in the background, but Mike was definitely going above and beyond to help Barry - surely the definition of teamwork?
This is probably the hardest badge to earn for "normals" who have been professionally cooking for 10+ years. After 10 years of being taught by chefs proper techniques for everything, thats always been singular meals, maybe the occasional family sized meal. Cooking for 20+ is a completely different ball game that the normals have little to no experience with.
And that's why I would like to see this done again, volume badge challenges in various ways. When you cook for volume, you need to start thinking about ingredient ratios and portion sizes. This is a skill that's not often shown in any sort of RUclips cooking video that I've seen.
We've been saying that the "normals" had leveled up through the years, now the challenges are leveling up as well! 💯
This is honestly one of the true chef challenges to me. Making one dish very well is doable. Being knowledgeable is doable.
Meeting the volume demands of a professional kitchen though. That is what separates a pro and a normal.
I'm so glad Jamie got his teamwork badge! I absolutely noticed him cleaning as he went and cleaning up after the other normals. So glad to see that recognized!!
Saying "But people ate it" when somone says "It was seasoned poorly/inadequately" is like Jamie Oliver saying "My family likes my cooking".
Ben talking about the bay leaves😂. He's so sweet and supportive 90% of the time, so when we get some of that sass it's the best!
How much you wanna bet they released the bay leaf video a few days ago just to prevent backlash from Ben's bay leaf comment today 😄
@@AngryAlfonse Meanwhile, I thought they released this video now because there was another recent video where velouté was mentioned and no one made fun of it. 😆 Kudos to Mike, though, for learning from the "2 Easy Ways to Make Cheese Sauce Like a Chef" video and picking the velouté over the béchamel.
@@AngryAlfonse Backlash? Usually the comments are filled with people yelling at the lads because they agree with Ben. There would've been confused cheering XD
Yeah i think that would be a great help and unbelievably valuabale for me !
I LOVE that the first thing Jamie thinks is 'What would Kush do?' Also, I knew the second he started cleaning up that he was gonna get an extra badge. I feel for Barry, but I'm so happy for Mike, cuz he did so well with the sauce. Well deserved boys!
Idk if this has already been done, but I'd love to see a "last minute substitutions" chef skills challenge/battle at some point - a bit like Jamies "improvisation" badge but focusing specifically on ingredient substitutions!
Basically, in advance, the boys are given a theme for an upcoming challenge and asked to develop a recipe following that theme. however, on filming day, they're told that the theme is actually "ingredient substitutions" and one/several of their key ingredient(s) get(s) taken away. They must now find a way to substitute this/these ingredient(s) while still following the recipe as closely as possible.
Example: They're asked to come up with a recipe for an upcoming "breakfast"-themed challenge. Barry's recipe includes a poached egg. However, on filming day, the eggs needed for his recipe are taken away. He now has to come up with somwthing that resembles a poached egg...but without actually using an egg.
I'd love to see how they would handle that situation and what substitutions they would come up with - the chaos and panic would be hilarious! Plus, having to substitute certain ingredients for others at the last minute is probably something most people can relate to, so this video might actually also be somewhat educational??
Great idea! Thank you.
That would be great. cant tell you how many times ive been making a meal, and oops no mushrooms. oops no something
Taking away the main ingredient may be a bit harsh and in my opinion takes away from being "educational". If I planed to make poached eggs - to stick to your example - and ran out of eggs I would make something completely different and not trying to substitute them.
But e.g. if the milk for my mashed potato is spoiled, especially if I recognize it last minute when everything else is already prepped/cooked I would **have to** come up with a way to fix the mashed potatoes.
Maybe it's a different concept/idea to take away staple ingredients while they are cooking: "You though you still have vinegar but you put the empty bottle in the pantry", "The onions/garlic/milk/... you wanted to use are spoiled and can't be used", ...
Oh this would be hilarious
Jamie and Mike are great team players. Barry on the other hand comes in and chooses to ruin // think only for himself?? Super frustrating when the two are flowing so well and Barry just refuses to work with others
I could not love Jamie more. Between getting bored cutting mushrooms and kissing Mike and Baz on the neck... he is perfect. 😂
Also, I rarely need to say veloute, but every time I say "halloumi," I find myself using the same pitch and cadence that Jamie uses for the former.
I think this encapsulates Jaime. He thinks about everyone. This is why I like him the most as a cook.
"All we need them to do is agree, work together and scale up" Ebbers, you know very well that's a recipe for chaos... And im here for it!
Yep, always a recipe for chaos 😂
@@SortedFoodand loved it!😂😂😂😂
Which seems to be what Sorted is all about these days.
I think it was very fair! Mike did brilliant with the sauce, and Jamie was running the kitchen. He really stepped up and kept everyone on the same page and was helping the other two out. Good call giving him the teamwork badge, well deserved!
Cooking for 20+ is a completely different game, especially when there are only 2-3 dishes. The easier route for normals (like me) is to make 8-9 big family sized dishes, buffet style. That's how I survive my dinner parties. Like Mike, I wouldn't even know how many potatoes to peel to make mash for 30 people 😂
How to scale potatoes: think how large a single portion of mash should be and how many potatoes would you need for it (depending how large they are), multiply by 30 and that's the number of potatoes you need to peel. So probably about 45 larger ones to 60 smaller ones should be enough.
The best rule is a pound of potatoes feeds 3 people. 10lbs for 30.
@@joelcarpenter7243 So around 500g for three, I'll try to remember that
There is also the "better off cooked" standard.
It doesn't really apply in a restaurant (or Sorted) setting, but it is much easier to simply eat leftovers than it is to cook a new dish, especially if the fate of the extra ingredients is yet to be determined. It's amazing how stretchy recipes can be; if the recipe says 3/4 lb mushrooms and you had to buy a whole pound, use the whole pound.
Of course that relies on your ability to adjust the seasoning, but so does scaling up. No recipe scales from family size to banquet size without needing some kind of fix (it's where we volume measure cooks have an advantage). Cooking all of the potatoes wasn't a bad call, letting them taste terrible was where Barry produced wastage.
@@joelcarpenter7243 That very generic rule doesn't take into account how many courses there will be, whether the potatoes are going to be main carb, etc.
You don't need as many potatoes when you serve them as a side for pie, compared with for example bangers & mash.
When Barry put the completely unseasoned (not even salt?!) chickens into the oven, I already knew it was over for his badge 🤣
Jamie absolutely deserved that teamwork badge, but I can’t help but laugh since he’s usually the one causing absolute chaos and going against the team, LOL!
I’m SO glad that they awarded Jaime an extra badge because that was awesome work! And he helped out Mike with the sauce as well ❤ I would love to see how Jaime would fare in a challenge where it’s 2 chefs and him and see if he can keep up
Kush looking horrified at the chaos and hiding in the kitchen 🤣
"It's Jamie! He's always talking about pie!" 🥧😄
I'd actually kind of like to see this more, where the boys cook for a crew. Takes some of the load off Kush and makes for an entertaining video.
He does get paid mate...
@@ticketyboo2456 Yeah and? Go tell your boss to give you more work, you're getting paid right?
Someone (Kush?) still planned out what to cook, got the ingredients, and setup everything they'd need - that's half the battle of making dinner! The entertainment bit is watching them cook 😂
This is a good idea.
I really hope Jamie gets the win for this series!!! Seeing his growth over the years as someone who only found this channel last year has been inspiring!!!
Never thought Kush was doing this in the background every episode WHILE sometimes appearing in random moments, nor that there'd be this many people in the full time time.
I just assumed everyone brought Tesco meal deals for lunch or microwaved some leftovers from home 🤣
This makes me appreciate Kush even more.
Yes!! Chef skills challenge returns! 🎉😂 let the chaos begin! 😂😂😂
Indeed.
My dad learned to cook at a bar he owned, so anything he made we had leftovers for a week, even with five kids. The last of his beef stew always went to the dog -- who would carefully set the peas to one side and devour the rest.
😂😂😂
Love the image of the dog carefully setting the peas to the side. 😂
This was a tough mission. I used to batch cook some dinners for school groups on outdoor sports weekends, so I get this one for sure. That said, if people have been exercising all day they tend to ignore mid-tier cooking so I got away with it.
😂 love this! Make them so hungry that they don’t notice. Haha
The little Kush cam is so funny, pls have more of that
😂 glad you like this little touch!
What did I miss? I only saw him do a cameo or two?
@@TanukiSC yeah it was only 2 times, but seeing how he reacted to the guys trying to do the same thing he does every day, was just so funny
I really appreciate how Jamie is getting his dues, man did a good job.
Kinda 50/50 on the seasoning badge. Although the mash didn’t turn out great, brocoli seemed well thought out flavour wise and a large reason Mike’s sauce turned out well had to do with Barry’s seasoning suggestions such as the wine reduction.
I haven't laughed so hard at one of your videos in ages! "Do you want to check the chicken is cooked?" I cried laughing.
"Im going for the seasoning badge"
Proceeds to season nothing
Classic Barry. The Wildcard strikes again!
I’m beyond proud of Jamie in this vid!!
Bet this was a good day to be a sorted food employee in the office, all that pie around! What a perk of the job!
You know it! 😂
Are you feeling better now Alex?
Oh no! They failed the volume badge! That means they're going to have to do it again... How awful! Ahahaha that was brilliant to watch, it feels almost dangerous because if they really mess something up they could end up wasting so much food at once, but the boys did a fantastic job, can't wait for the next chaotic mess
This channel is everything I wanted from cooking shows when I was a kid. This channel is so well produced, and everybody on the show fits together perfectly. I've not been subscribed long and I can't stop watching them all the time.
I know that half of it was likely just looking for opportunities to improvise, but it really was nice to see Jamie step up and being a leader. Mike usually does that, keeps communication while Jamie improves spirits. With him focused on the sauce it was great to see Jamie keep communication up, and the cleaning and planning and such was just thoughtful. Well deserving of that second badge, much as I wanted to see Mike pull things into a tie.
You know when Ebbers says “all you need to do” it’s gonna be a problem lol
Finally, a REAL FAMILY DINNER CHALLENGE!
We’re here for it! 🙌🙌🙌
It's nice to see that Mike and Jamie have learned a few things over the years 😁
I am happy to see Eddie and Izzy everytime they show the team! Im sorry if i missed other long term staff but here's the thing; Eddie is a million feet tall and his presence makes me smile. 😊
I do disagree to an extent that Barry should either get his badge or Mike shouldn't because he tasted the sauce and put his recommendation into the seasoning of it. If that wasn't the case the pie would have been bad because the sauce would have been under seasoned
YES! The badges are back! Missed them so much! Thanks guys!🎉🎉🎉🎉🎉🎉
Glad you like them!
@@SortedFood always guys!
I love that you guys are posting new stuff much more frequently than before! Brilliant, mates!
This was an interesting one for me. Having been a "home cook" all my life then being made redundant by COVID-19 and a friend of a friend saying he needed an extra chef in his restaurant and being thrown in the deep end as a professional chef in a professional kitchen this resonated with me.
This video just makes me love Mike and especially Jamie even more and I didn't think that was possible! Great job boys!
With a challenge like this I’m wondering if at some point the team thought their lunch was at jeopardy… 🤔
Real question was what was the back up XD
Kush panicking in the back is the back up lmao @@RexZShadow
We really need to see more of these~!
I'd love a format that's a little more educational though. In this case, the normals had no clue, and the audience had no clue.
It'd be awesome to see Kush and Ben walk them through the skills in one video, and then do another like this one to redeem themselves
Yes, Jamie deserves the additional badge and praise.
Loved this one. I used to be head cook with a staff of three for four hundred students . Cooking -it-up or down was an everyday experience when the count reached the kitchen. Thanks.
Haha Barry got properly Sorted judging on his face when Jamie got the teamwork badge 😂❤
This was amazing, well done!! I love seeing the growth that's happened through this entire Skills Competition!
One of the best vids in a while guys.
The comedy. The stress. The information.
At the end I was on the edge of my seat and when Jamie took that second badge I was laughing my head off from the others reaction.
Something I love about this channel is it is also educational. The way Ben asks them questions and it also teaches the viewers! Its fun, entertaining, and educational!
Ben is an amazinnnnggg teacher!
I have literally never seen FRESH bay leaves before today! I knew logically that there was a fresh version but I am SO curious about the flavor.
Have been waiting for ages for the chef's skills to return, I think I rewatched all the other episodes at least twice . Keep it up lads . Love this channel 🎉
Been waiting for a new one of these videos, I love this format. Well done gentlemen. We had a team of 10( one Baker, 1 kitchen head, and 8 cooks. Three protien options, two veg options two starch options and we would have loved to only cook for 30 people.
We were feeding 1500 hungry Marines and Sailors.
Thanks, Jamie, i will never hear the word "valoute" without hearing your voice with the inflection. 😄 I also think you did a great job in communicating and am so glad you won the teamwork badge as you richly deserved it. Lovely sauce, Mike.
Ben standing there.. The Boys: "What would Kush do?" Poor Ben
🤣🤣🤣
As someone who has worked in kitchens that cook for a lot of people, this is truly interesting. You're a team and should work together as such, meaning no one is too good to do any of the work. I know the setting is different but it's still entertaining 😁
This video gave me war flashbacks to working in a kitchen and the sheer volume of food you have to work with. Great video! Keep at it boys, cooking at a large volume is honestly it's own set of skills than homecooking.
Yay! Jamie! my 4 kids are watching cheering for you!
Here's a strange compliment.
I have a habit of skipping forward 5 secs in all videos on YT, more as a habit than for any other reason.
But this damn channel, every time I do I feel like I've skipped something hilarious or very interesting, skip back again and have a wonderful time seeing what I nearly missed. You're directly beating my addiction on saving time for no reason.
Great video as always, and a special shout out to your editors!
That moment when Barry preps all of the chicken, the potatoes, and the broccoli and even helps Mike taste the sauce, but doesn't get the seasoning badge. Meanwhile Jamie gets a teamwork badge by sabotaging the mash potatoes. Jamie only added 1 stick of butter when told by Barry to add 2 and barely even salted the potatoes before mashing.
Cant forget Mike was the one on the Hobs, and didn't salt the potato water.
I like the measuring and scaling technique of half spooning and half scooping flour...that is certainly one way to do it.
amazing video. I really like these videos with all 3 normals cooking in the kitchen at the same time, reminds me of the good old Sorted days
This was such a joy to watch. Thanks everyone! I really hope this bay leaf disagreement continues for years to come in videos. It will be like the Stan Lee cameos in the MCU.
1:30 i call foul! Kush is full of snark and sassiness and we love him for it! Hes the best guys! He cant be kush is hes silent! Justice for sassy kush!
Never been so early but already loving the fact that we have another chef skills badge battle!
I remember cooking 1600 meals a day with my staff being four student learners between 14-17. They looked at the ingredients the same way 😂.
Ben getting excited over the bay leaf when it was mentioned is great. Especially after watching the bay leaf episode
When we make mash potatoes for Thanksgiving (around 30 servings because leftovers) we use a hand mixer to mash and mix it, works like a dream
Straw poll - who would like to see Kush and Ben do EXACTLY this challenge but by the numbers, pulling out all the cheats/hacks/'methods' and showing us how to do volume. The idea of cooking for more than 4 is terrifying and all my food horror stories relate to volume as a challenge.
Gotta hand it to you Jamie, coming from another chef over here, you did great
You can tell this was filmed before the bay leaf video the other day. 😂 Otherwise, Mike would have had to agree about adding them vs doing it because Ben and Kush expect it. 😂 I said yea when Jamie got the extra, well deserved extra badge! 👏🏻👏🏻👏🏻
Would gladly watch several more of these batch cooks
Absolutely agree with the badge decisions btw, Barry put some effort into seasoning but he was inconsistent and not keeping up with what the others were doing or working together with them to ensure the seasoning was great.
Yay!!! Great video, I love it. ❤ I have missed the skills challenges. I don't think I could handle all those portions, so good job boys even if you didn't get all the badges you wanted. 😁
The bay leaves are awesome. Recently had a bay leaf Lemonade in Leeds and it was the best mocktail I've ever had!
Love the family style episodes (cooking for more) can we have some more pleeaaase
You have made me realise how hard our works restaurant (canteen-sorry Phil) must work producing 4 completely menus every day for 500-1000 people. Thank you.
AHHH IM SO EXCITED FOR THIS VIDEO! Chaos!!!!!
I really love these intros that are recorded in the middle of the action!
Awesome, happy to see more chef skills videos again
Jamie really was on his game this round, well done! Also, I can't believe how big the team is!!! Well done, boys!
Jamie’s heal click made my day! Another great video, team!
As someone who hails from a large Midwestern u.s. family and attends potluck camping events as an adult, this episode has me cackling 😁😁😁
Love it. I'd like to see more of these volume challenges :) !
One of my fave video formats! Off to cook dinner with my sidekick now 🤗
One of the best videos since a while 😅 we miss the ultimate chef skills for the normals, keep it up guys, always supporting,
Also don't forget the Syrian food, happy to give some tips😬😬😬
the fact this came out after the bay leaf video makes the veloute part so much better
Great video Guys, thanks for sharing and thanks to the Sorted team! 🙂
From California this episode was awesome. Keep up the good work fellas
I LOVE these badge videos!! Always chaos and delish
Absolutely love these videos
I love the badges videos, please keep these coming
Video idea: this video got me thinking you’ve mentioned several times that you have a crew of 30 but we rarely see any of them. I actually have no idea what 30 people are doing every day. you do have a film crew and some people are probably help you, prep. But I think it would be really nice to do a video that highlighted these behind-the-scenes people. My guess is that you would really have a hard time getting all these great videos and being the Business that you are without them. So I would really like to see you highlight these people ,introduce us to them and showcase their contribution to SORTED.
As someone who does catering for over 40 4 year olds everyday I very much enjoyed this video!
