    I’m so excited that you teach traditional Fujian cooking! I worked at a Chinese restaurant for 7 years and ate all of their traditional meals/learned the culture and language and now I can’t really keep in touch so it’s great to learn some of those traditional meals that I miss so much!     You can try stuffing like boiled mashed potatoes with herbs and spices of your choice. Cauliflower too can be used instead . Also minced cooked meat with herbs and spices. Awesome.

    You are the best. After viewing your tutorial, I checked out several other videos on the same topic and yours by far was the best. I thought for a moment I was viewing America's Test Kitchen (that's a compliment). Your asides with suggested food combinations, luke versus hot or cold water and how they can affect the out come, as well as fluffing the pancake up was just priceless information.     I used lard to make the pancake. The pancake turned out really delicious. Warmed up the cold pancake in the toaster oven and it was as delicious as when it was just made. Thank you Raymond. Hope all is well with you and your family.

    You read my mind! I've been on a Asian flavor kick lately and I actually think it's helping put my crohns disease in to remission! I love quick meals you can make and always re purpose with new ideas and flavors! I wish I knew more combinations!

    This is my absolute favorite side dish. I have never been able to make it right. I tried the korean version but it was ways very chewy and thick. I like the crispy kind the best, can't wait to try this.

    Very good lesson. Tried 3 recipes, yours is best. Use lukewarm water, not hot! I needed to adjust the amount of water up.

      Doodah Gurl yes, they are very delicious esp if you put a lot of green onions in there. I ate the whole thing by myself, which shouldn't cause I'm on a diet. :(

    I often make chijimi so I was wondering how this would be different and it's VERY different in terms of method and finished product, despite looking slightly similar in the pic (depending on the ingredients you use for said chijimi or pancake, of course). Anyway, I'll give this a try on the weekend, Raymond. Thanks again -- you rock! One thing you might want to add on the video, though, is what kind of sauce you should use with the pancake. For chijimi, for example, I often use a sauce comprised of soy sauce, rice vinegar, chili powder, and a couple of other ingredients. I'm guessing there is a similar but equally if not more delicious Chinese sauce that goes particularly well with this.

      Richard Smith Hi Richard, yes some places do serve with sauce and some street vendor don't serve it with sauce but serve it just like this. The pancake itself without sauce you can taste the savory of the green onion and the sweetness of the dough, it's really good just by itself. Sometimes I think the sauce overwhelm the flavor of the green onion and the sweetness of the dough, that's why I didn't serve with sauce.

    If anyone who makes this is reading the comments, don't check the heat of the pan AFTER you add the oil, especially if your hands are wet. Check the heat PRIOR to adding the oil for safety.

    Nice. I have made on an induction stove and it is not a good cooking option as you can't move the pan around - the heating element must be kept "covered" otherwise it stops heating up .
    But anyway, bacon ? Yum ! I like you way you think and will try roasted onion flakes, or fried garlic on next batch.
