I found it really easy to bolter (fail to hook a wire) in this sim. The solution I found was to keep the "W" of the nose pointed at the horizon, and the thrust vector icon pointed directly at the glide path. You move the velocity vector up and down with throttle. Specifically, keep the velocity vector pointed at the circle on the near end of the landing pathway, the end just outside your canopy. If you want a more mundane way to get a good landing, aim the velocity vector at the area of the landing runway that is next to the big, side elevator. That is where the 3 wires are. Also, takeoffs are VERY forgiving. I've taken off directly after landing by just a bit of right turn to line up with the bow, and go for it. You don't need to start at the back of the carrier. To control the carrier ship, use the map, target the ship so it is yellow, and click on the map with the mouse. It will try to go to that location, though the pathfinding is a bit wonky sometimes.
Yeah, on airports if they have HLT fuel/munitions truck you can supply yourself with respective supplies. Carrier will supply you after landing as long as its alive

I'm using default bindings, you can move the map with the mouse or with the one of the thumbsticks (can't remember now which one) on your gamepad.
