Black Pepper Steak using Leftover Standing Rib Roast

  • Ingredients:
    1 medium onion (sliced thinly)
    ¼ tsp black pepper
    Pinch salt
    10oz beef roast (sliced thinly)
    ½ tsp black pepper
    1 tbsp rice wine
    1 tbsp sweetened soybean paste (甜麵醬 tian mian jiang)
    1 tsp turbinado sugar (or use ½ tsp white sugar)
    1 clove garlic (minced)
    ⅓ cup water
    1.5 tsp cornstarch
    Soy sauce if additional saltiness is desired
    Directions:
    1. Thinly slice the onions and mince the garlic
    2. Thinly slice the beef
    3. Almost char the onions on very high heat, adding in a quarter teaspoon of black pepper and a pinch of salt to draw some of the moisture out and to layer on the black pepper flavor.
    4. Lower the heat to medium high and cook until the onions are soft, then remove the onions from the pan and set aside.
    5. On high heat sear the beef, and when halfway cooked add in another half teaspoon of black pepper.
    6. Make a spot in the middle of the pan and toast the garlic gently to bring out its aroma.
    7. Deglaze the pan with rice wine and add the sugar.
    8. Add the onions and sweetened soybean paste to the pan, stir well to combine.
    9. Mix the cornstarch with the water, forming a milky white mixture and add this to the pan to form the silky sauce.
    10. Taste for seasoning and adjust for saltiness with soy sauce if needed, and add more freshly cracked black pepper if desired.
    11. Remove from the heat and enjoy!
