The meat I made three months ago is now ready.
Some ethnic minorities in Yunnan will ferment meat to make sour meat. Some will wrap meat with musa bajoo leaves and some will ferment the meat with sticky rice and spices. But they both use a small amount of salt and let the meat ferment in the unique natural environment of Yunnan. The meat will take on a slightly sour flavor and is very yummy yet not greasy.

0:15 pork belly
0:22 remove hairs
0:50 cut into strips
1:03 add salt, and pickle for 3 hours
1:30 fry sticky rice till the colour turn into “yellow”
1:50 light incense to smoke clay pot
1:56 cut ginger
2:04 add chill powder, salt, Sichuan pepper, black cardamon powder into fried sticky rice, and mix them evenly
2:19 place some seasonings on the bottom
2:28 heavy/strong wine (just bedew )
3:15 seal clay pot by water
3:31 broad bean (or horse bean)
3:44 garlic seedlings
4:12 remove skin of broad bean
4:33 grab some pickled pork belly strips
6:14 ginger, Sichuan pepper, dry chill
6:22 garlic seedlings
She said this kind of pickled pork has unique sour flavour, and the pork is yummy but not heavy

Dawang is so cute! I am glad he is loved😇 He reminded me of my dog 🐕 named piglet. She always knew what time meals were to be eaten. It I was napping or sleeping in late, she would always scratch at my room door to wake me up😂 I spoiled her too much. She was a good Chihuahua. Loving but always wanted to eat what everyone else was eating.

I'm not sure when I changed my mindset on open mouth chewing, but I did. I used to feel really uh...grossly American about it and would think other cultures were disgusting for doing so. I'm ashamed of feeling that way. It's been years now and I'm not sure when but I've come to wholeheartedly accept it as something endearing. The food is lip smacking good. It's culture to show appreciation sometimes by doing so. I can feel the appreciation and love watching her cook, and wishing *I* was the one lucky enough to chew with my mouth open getting to taste it.
It's people like Dianxi who open our minds to other cultures and see their absolute beauty.

Most Asians eat with our mouths open because our food is most of the time pipin hot and very spicy, with these two combinations you cannot help but eat with your mouth open...lol

When a dog is well fed, it's well behaved. My German Shepherd, 14 Ridgebacks, Jack Russel plus 3 Siamese cats gently take their treats and hide them cos they're never hungry. My 3 Siamese cats are a disgrace though, they eat very well (all delicious cooked foods) plus bring their poor friends over to finish their food while they preferr searching the neighbor's bin. They have since stopped snooping in bins and learned this behaviour means Deworming, Bath and being Grounded indoors which they hate.
