- Shorshe diye parshe macher jhol (or parshe macher jhal) is a simple and delectable Bengali fish curry. Here, fresh parshe is simmered in a potent and flavourful mustard gravy. This Bengali fish-curry recipe is easy to prepare, insanely delicious, and requires only a handful of ingredients. The star of the show is, of course, fresh parshe. A freshwater catch with a soft sheen, parshe (a kind of mullet) is identifiable by its small, triangular mouth and slender shape. The fish is soft, flaky, and sweet to the taste-all of which are perfectly complemented by the fiery, potent flavours from the mustard gravy.
This parshe macher jhal recipe is rather simple. The only finicky bit is grinding mustard seeds to a smooth paste until completely non-grainy. We’re using a mix of yellow and black mustard for a balance of flavour and sharpness. Besides fresh parshe, this recipe uses dal’er bori (sun-baked lentil dumplings) and brinjal, both of which soak up the flavourful curry, and provide a contrast of tastes and textures to this warm, comforting parshe macher jhol.

Correct. Mustard with onion and garlic doesn't go well.
@@mousamjoykundu2217 Chicken is different and fish is different. To retain the original tangy aroma of mustard with fish onion and garlic should be avoided or else it masks the flavour of mustard. Or else don't add mustard if you're preparing with onion and garlic example in case of macher kalia. But chicken can't be prepared with mustard. Although it's my personal opinion and the general perception, may differ from person to person.

If you live in EU or the Americas, look for mullet. There's several mullet varieties. They will remind you of parshey or bhangon mach.

MUSTARD PASTE TURNING BITTER: Sauteing the mustard paste in oil DOES NOT turn it bitter. It is a food myth. That only happens if your mustard paste is bitter to begin with. To make a good mustard paste:
- start by soaking the mustard in water for two hours (at least).
- Then grind the mustard in a grinder or on your shil nora along with green chillies and a little salt.
- Depending on the size of your grinder jar, you need to take sufficient quantity of mustard seeds so that it comes up above the blades. Otherwise your paste won't be smooth enough.
- Grind patiently until your mustard resembles the consistency of sandalwood paste. The brown mustard skins should look like specks or dots and no bigger.
- Taste the paste. If it is not noticeably bitter, congratulations! You have made respectable mustard paste fit for a Bengali dish. The tiny hint of bitterness will go away when we cook the mustard.
We shot this video last year in Calcutta, but since we were past the parshe season, we held on to it for this winter. You will notice quite a few amateurish filming mistakes, but it is a good recipe regardless.
PS. Bonus points to whoever can say how many times they hear Bagha in the background. 💛
PPS. This is a parshe machh'er jhol. Please refrain from asking if it can be made with bhekti, chicken, paneer, soyabean, etc.

I am a maharashtrian and we use mustard only for tadka. We never use mustard oil for cooking. I love your channel and i always watch ur recipes but never tried any of ur recipes (guilty). I loved this recipe and really wanted to try it but I was sceptical ki itni Rai kaisi taste karegi. I gathered courage and tried the recipe and loved it ❤❤❤ every body loved it. Made this fish curry for the 5 th time yesterday😅 😅😅

Rakhi Singh You can try your local Bangladeshi grocerer, though it would be the frozen version but it's not that bad. I buy it from a store in Cork city...tastes alright. Although, seabass is a great alternative...have tried it in a similar recipe before and works really well.
I personally love to add dal badi in many veg and non veg recipes.. They add dat special taste to the curry..very well made recipe..
