Hey Sam and co, I have a great video idea! After seeing Sam eyeball so many different measurements I’d love to see a video of him doing his signature measurements into a bowl and then seeing how accurate he is! Tablespoons, teaspoons, cups, whatever. Love the content!

Hey Sam great take on a giant White Castle Sam. In my past I worked for White Castle and you are right they do use dehydrated onions. The onions are reconstituted by putting them in a large bucket with water and putting that in a fridge overnight. They cook them on a special patented grill 30 at a time. They use a ladle of the onions then place the 30 in a 5x6 rectangle on the grill, then comes the dredge mix which is a salt and pepper mix and then the top and bottom bun. Also, the meat does not shrink because they use Grade A USDA beef with a low fat content. White Castle also has their own patty manufacturing plant and their own bakery that makes their buns. They also add 1 pickle on each one. Hope you enjoyed this insight from a past worker for White Castle. Keep up the awesome cooking videos!

Back in the ‘80s my wife was HR manager at the Swift Meats company in Ft Worth that made some of the hamburger patties. She confirmed it was good quality beef and they made the patties by putting the beef in a square tube with 5 rods in it then flash froze the beef. Then the beef was removed, sliced and packed.

just take a small container, add the dry onions, add warm water and let sit for 30 minutes and they are ready. Thats what they use at Mcd's on the regular burgers

2. The steam cooks the beef through. So long as the bun reaches 145 degrees for 15 seconds, it is safe to eat.

I remember the day I figured that onion trick out. I was very happy for about ten minutes. I'd like to try having a Quarter Pounder with that kind of onion on it someday...
My mom makes a White Castle casserole & it’s to die for. Any time I give the recipe to anyone they fall in love.
2 crescent roll tubes
Ground beef, onion soup mix
Pickles & American cheese
Brown the meat with the soup mix & add one crescent roll layer (don’t separate them) to the bottom of your casserole dish, layer meat pickles & cheese (optional) then put the last crescent on top & bake according to crescent packaging. So good!!
Awesome! Always been a White Castle fan. Rehydrating the onions was an excellent idea. I've been using this trick for all kinds of recipes for probably 20 years. Way back when, they were always in the cabinet and sometimes I was lazy and didn't feel like chopping onions LOL!

i was thinking the same thing. they don't don't have White Castles out where he lives so he has to rely on the frozen ones in his store - which don't have pickles so he'd not have known.

You know I've never commented on one of your videos before but I had to this time. We're all drawn in by the great recipes obviously. Especially, when I see a classic like a White Castle on STEROIDS you know I gotta click. Been following you for awhile and what really keeps me coming back is the family vibe banter. I have never missed a video and this one was awesome. I love how you and Max go back and forth LOL It kept me going while I recently spent 17 days in the hospital following 2 surgeries on my left leg with another one scheduled for March. The bun was out of proportion to the fillings. Too much bread on the top, but thats just my opinion. Love the videos and have made several things based on them. One of my favs was the double patty onion burgers.

Pause the video when he has the actual White Castle burger next to the big one. The bread to meat ratio is actually about as perfect as they could’ve gotten it
I've cooked thousands of white castles in my day. One thing to note is that white castles have a slice of dill pickle and white castle also has really good brown mustard packs you can opt for, very good stuff and a side of deep fried onion chips and you're there.

I tend to prefer their jalapeno sliders...swaps the cheese for pepper jack and adds some pickled jalapenos.
You can't have a slider without a pickle..
Or you can ask for everything on it and they put a ketchup and mustard mix

I am not a big burger fan, nor have I ever been to a White Castle. But this video was thoroughly enjoyable and it the end result looks amazingly delicious.
Frozen White Castle heating instructions To make them taste like steamed fresh from restaurant.
Conventional Oven:
Preheat oven to 350 degrees. Barely cover bottom of a broiler pan with steaming hot water. Place the slotted portion of the boiler pan on top of steaming water.
Remove frozen hamburgers from wrapper, separate, and place on slotted boiler pan. Cover hamburgers and slotted portion of broiler pan with foil and seal tightly.
Heat for 15-20 minutes if frozen, 10-15 minutes if thawed.
After heating, let pan sit for 2 minutes before removing foil.
Try this method you won’t be disappointed.
Or just wrap in paper towel and toss in the nuker for 30 - 45 sec.

Guys, by adding Mustard to the sandwich, it is no longer a White Castle burger. It is closer to a Krystal burger which is popular in the South East part of the U.S.A. Other than that, another great video!

as someone from the Chicago area who has access to White Castle on demand and even picked up a crave case for superbowl sunday, this was very accurate and looks great.

As a former cook at Krystal's (white castle of the South) you didn't do it the "correct" way. However i think your way is better. The correct way is, burgers go on the flat top (24 mini frozen patties) add wet onions on top of raw meat, then bottom bun, then top bun and most importantly, cover with lid. This allows the buns to steam and the meat and onions to cook. Once the bottom bun is grayish (the timer goes off) is done. Simply flip, add mustard and pickle and top bun, and serve.
White Caste is a great concept. I just can’t do steamed buns though. I mean, soggy bread, ugh, vomit. Unless it’s actual bread pudding dessert. Besides, the patties are too damn thin anyways. You can’t taste the meat unless you either combine the patties and toss half the buns or get double or triple patties on each slider.
If you're going to do it that way at home, might as well do it the ACTUAL correct way. Heat up some beef tallow in a pan, about 1/16-1/8 inch deep or so. Slice some white or yellow onion PAPER thin. Make a quarter to one-third ball of 70/30 to 80/20 ground beef. Drop a dense handful of onions into the grease. Then take your ball of ground beef, set it on top of the onions, and smashburger that boy. Smush that beef right into those onions with a big old spatula. Then wait til it gets nice and crispy on the bottom. Flip it over, add cheese and throw some potato or brioche buns face down on the griddle to toast, wait a couple minutes and you've got one delicious burger blast. Potato buns soak up the grease better without getting soggy, brioche tends to taste better, but if using brioche, give both sides a thin brush of mayo after toasting. The oil in the mayo will help keep the oil from the burger from soaking in and making your burger soggy.

Love the channel. I just watched the Hawaiian bun / White Castle from a couple of years ago and this popped up. I have only been watching about 6 months, what is the flat top that you use, the circular cook top. I have never seen that anywhere. Keep creating great food and sharing!
Thanks for the video the burger looked really good, it is also ideal to play with. I like to make original as shown and then play with it, 7 time out of 10 the original recipe and method are better. I am going to try double patty one steamed and the other smashed style and use a multi cheese blend with some smoked cheese and chilli pepper spicy cheese. With the onions i like to lightly brown but not caramalize rehydrated onions and fresh onion have had a quick blanch on my burgers, it is something i saw back in the 1980's at bavarian fairs in Germany, they used light beer to rehydrate the onions and had a very light caraway and fennel flavour, fond memories. I worked at White Castle Sam. The onions are soaked for four hours in water in a fridge. then they take a ladle and scoop four ladles of onions and water the paddies then the bottom bun goes over top and the top is stack over the edge then they steam them till they are cooked. To serve it they take a spatula and flip the top over on top. you need more water
