Anything above 70% is bitter to me, so I thought, "If I want the true benefits of dark chocolate, then I'll have to go 100%". And rightly so, there's no point to eating dark chocolate if it contains sugar. Now, I'm at 100% & I haven't looked back since.

90% and upwards, use the Dutch Process. An alkali is used to reduce the bitterness, but removes most of the good benefits. So 85% is best for me.
I would love if lindt wouldnt put alkali in that.

I eat the Lindt 85, a couple squares a day, after lunch and dinner. Anything less than 85 is too sweet for me now. I used to love Green & Black's, which is organic, but haven't been able to find it in stores lately. It is on Amazon, but in bulk, and I'm also concerned about it melting en route. I've tried Endangered Species, and for some reason, it tastes like a zoo to me, like it kinda smells like a zoo. Maybe that's psychological? 🤷
I'm a woman, and I do consume soy in moderation. Japanese people have a lot of soy in their diet, and they have less thyroid disease than we do, and the rate of breast cancer among Japanese women is much lower too.
Dr. Weil says there's a lot of misinformation about soy online and that it's safe and healthy. Here's what he says about it in regards to thyroid disease and breast cancer in particular:
Thyroid Problems: Excess consumption of soy can affect thyroid function, but only if you have a thyroid disorder to begin with, or if you’re not getting enough iodine in your diet (a rare deficiency in the United States). If you take medication for hypothyroidism (low thyroid), and are concerned about the effect of eating two daily servings of soy, have your thyroid levels checked regularly. In otherwise healthy individuals, studies have found no association between thyroid problems and soy consumption.
Breast cancer: Here, the idea is that high levels of isoflavones, active ingredients in soy that behave like estrogen in the body, may increase the risk of breast cancer. While high levels of isolated isoflavones may do so, it appears that the total mix of weak plant estrogens in soy protects the body by binding estrogen receptors and only partially activating them. This protection may reduce the effects of excess estrogen exposure from such external sources as meats and dairy products from hormone-treated cows as well as artificial chemicals and industrial pollutants that act as foreign estrogens. Japanese women, whose diets contain a significant amount of soy foods, have only one-fifth the rate of breast cancer that occurs among Western women. In fact, a 2022 analysis of research conducted since 2003 revealed an inverse correlation between the amount of isoflavones consumed and breast cancer occurrence in pre- and post-menopausal women; women who consumed more isoflavones showed a reduced risk of breast cancer at either stage.

I saw this comment a few days ago and tried the Lindt dark 90%. This must be an acquired taste type of thing. No worries one peace a day is all I can handle.
I'm enjoying a square right now actually. I didn't like it at first but now I love it. Of course the sugary milk chocolate candy bars taste better at first, but when you start to eliminate all forms of sugar from your diet, you will find the Lindt 90% is very good. It is quite an indulgence really I will have 1 or 2 squares right before bed a few times a week. If you don't like it, give it some time while you try to eliminate other sugars. You will learn to appreciate the rich bold flavor. Like Cuban coffee. Lol
I buy 100% dark, melt it, and add a small amount (to taste) of monk fruit sweetener. I also add nuts and let it set up on a sheet tray. I grind my monk fruit in a spice grinder so it doesn’t cause the chocolate to be grainy. It is delish!

The cocoa powder as was the secret was obtained by roasting 3 days at 52°C so that the protein doesn't oxides or else with the chocolate the organism will reject the protein in form of brown stains on your skin and the cleaning effect of the cocoa as edible detergent is lost. This why avoid eating chocolate, instead in the evenings, eat a chocolate called deserts as ice cream for ex., they are made of cocoa powder.

That is good question. Now I want to know this too...i read some research that Raw Cacao is best ( which usually comes in powder form). Some experts claim Raw Cacao is better because most of the flavanoids, minerals & vitamins etc are still present & not destroyed by processing ( which happens when raw cacoa gets made into chocolate bars). Some experts disagree. I guess you need to research & decide for yourself? After a while it gets confusing ( to me at least) . So i just enjoy both Raw Cacoa and Dark Chocolate 😅

70% is pretty much milk chocolate, but if on keto you want at least 85% (90% more alkali's that 85% doesn't)

Also another thing to consider when buying dark chocolate is to not buy the really really high percent dark chocolate like 95%-99%. When the percentage is that high the chocolate becomes a bakers chocolate which is more so made to be used as a Ingredient instead of something for direct consumption daily.

*WORTH MENTIONING* Not only do I avoid dark chocolate with soy lecithin (all Ghirardelli has soy), I also avoid dark chocolate that is processed with alkali. The Lindt 90% Cocoa dark chocolate is processed with alkali, the 85% Lindt isn't. So I consume the 85% sparingly in my diet. We mustn't forget that dark chocolate contains amounts of lead and cadmium at levels high enough to come with a warning label in the state of California. Therefore people should be aware of the toxic chemicals found in dark chocolate. As far as I know no one has done a lab analysis to determine which brands, if any, are devoid of those toxins. But it sure would help is someone took the initiative to test all the different brands and shared the results.
As far as I know from my research : Mast organic 80% dark and Taza organic70% has the least amount of cadmium and lead.

Lol cocoa is processed cacao with sugars and stuff added. If u want healthy chocolate look for the highest porcent of CACAO not cocoa. CACAO ok.

Rescent report came out that Lindt chocolate is full of heavy metals. Make sure you research heavy metals in chocolate. It's rampant.

Sams club is actually legit. Ingredients: chocolate liquor, sugar, cocoa butter, natural flavor. Not perfect, but better than some of the high dollar stuff and it comes in different higher percentages.
What about Sunflower Lecithin? Healthline says it's good for you, among others. Also, what's the difference between artificial sugars and alternative sweeteners like Monk Fruit, Allulose or those similar natural sweeteners?

If you cut off added sugar from your life you will find the lindt 90% super sweet. your tongue will be sensitive to sweetness even if it has little amount of sugar like lindt 90% it has 7 gr of sugar.
thats called earthy not sweet , i do eat ghirardelli 92% all the time but its not sweet nor bitter its creamy and earthy with just 3 g sugar, anything above 92% is not enjoyable.
i eat it for my sugar cravings, its better than eating a piece of cake lol

High percentage lindt is quite bad in flavour, when i tried it i though i hate dark chocolate bec it is very bitter and tastes burned - i would recommend trying other brands and you will see 85% can be quite a treat :)
