Ingredients:
𝗙𝗼𝗿 𝗕𝗮𝗿𝗶𝘀𝘁𝗮
5 medium size Onion, slice, प्याज
Oil for frying, तेल तलने के लिए
𝗙𝗼𝗿 𝗕𝗶𝗿𝘆𝗮𝗻𝗶
Marination:
2 medium Carrot, chopped, गाजर
10-12 French beans, chopped, बीन्स
1 ½ cups Cauliflower, florets, फूलगोभी
200 gms Paneer, cut into cube, पनीर
⅓ cup Prepared Fried Onion, तला हुआ प्याज
2 tbsp Fried onion oil, तले हुए प्याज का तेल
⅓ cup Curd, beaten, दही
few fresh Mint leaves, पुदीना पत्ता
¼ cup fresh Green peas, हरी मटर
Salt to taste, नमक स्वादानुसार
2 Green chilli, हरी मिर्च
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
½ tsp Coriander powder, धनिया पाउडर
few fresh Coriander sprig, roughly torn, धनिया पत्ता
1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
2 tsp Fried onion oil, तले हुए प्याज का तेल
𝗙𝗼𝗿 𝗧𝗲𝗺𝗽𝗲𝗿𝗶𝗻𝗴:
2-3 tbsp Ghee, घी
2 Bay leaf, तेजपत्ता
½ inch Cinnamon stick, दालचीनी
2-3 Cloves, लॉन्ग
2 Green cardamom, हरी इलायची
1 Black cardamom, बड़ी इलायची
Marinated vegetables, मैरिनेटेड सब्ज़ियां
Few Mint leaves, पुदीना पत्ता
3 cups Basmati classic, soaked for 20 minutes, बासमती चावल
4 ½ cups Hot water, गरम पानी
few Fried onions, तला हुआ प्याज
2 Green chilli, into half, हरी मिर्च
A pinch of garam masala, गरम मसाला
Salt to taste, नमक स्वादानुसार
1 tsp Kewra water, केवड़ा
few Saffron strands, केसर
2 tsp Ghee, घी
𝗙𝗼𝗿 𝗥𝗮𝗶𝘁𝗮
2 medium size Potato, boiled, small cubed, आलू
1 medium Onion, chopped, प्याज
1 medium Tomato, chopped, टमाटर
2 Green chilli, chopped, हरी मिर्च
1 cup Curd, beaten, दही
1 tbsp Coriander leaves, chopped, धनिया पत्ता
1 tbsp Mint leaves, chopped, पुदीना पत्ता
Salt to taste, नमक स्वादानुसार
¼ tsp Sugar, चीनी
½ tsp roasted Cumin powder, जीरा पाउडर
A pinch of degi red chilli powder, देगी लाल मिर्च पाउडर
𝗙𝗼𝗿 𝗚𝗮𝗿𝗻𝗶𝘀𝗵:
Fried onion, तला हुआ प्याज
Coriander sprig, धनिया पत्ता
Process
𝗙𝗼𝗿 𝗕𝗮𝗿𝗶𝘀𝘁𝗮
Cut onion into thin slices and ensure they are almost of the same thickness.
Heat oil in a kadai, add a few onion slices at one time and deep fry until crisp and golden in color.
Transfer them to an absorbent paper. Cool them completely and store in an airtight container for further use.
𝗙𝗼𝗿 𝗠𝗮𝗿𝗶𝗻𝗮𝘁𝗶𝗼𝗻
In a large bowl, add carrot, french beans, cauliflower, paneer, and fried onion.
Add fried onion oil, curd, fresh mint leaves, fresh green peas, salt to taste.
Add green chilli, degi red chilli powder, turmeric powder, coriander powder, fresh coriander sprig and mix it well.
Add ginger garlic paste, fried onion oil and marinate everything well. Keep aside for further use.
𝗙𝗼𝗿 𝗧𝗲𝗺𝗽𝗲𝗿𝗶𝗻𝗴
In a large cooker, add ghee once it's hot, add bay leaf, cinnamon stick, cloves, green cardamom, black cardamom let it splutter.
Add marinated vegetables and saute it well.
Cover it with a lid and cook on medium flame for 2-4 minutes.
Add a few mint leaves, soaked basmati rice, hot water, fried onion, and green chilli.
Sprinkle some garam masala, salt to taste, kewra water, few saffron strands, ghee.
Cover it with a lid and cook over medium flame for 1 whistle.
Let it cool at room temperature until pressure inside the cooker goes down naturally.
Open the lid and fluff the rice with a fork. Transfer it to a serving plate or bowl.
Garnish it with coriander sprig and serve hot with raita.
𝗙𝗼𝗿 𝗥𝗮𝗶𝘁𝗮
In a bowl, add cubed potatoes, onion, tomato, green chilli, curd and mix it well.
Add coriander leaves, mint leaves, salt to taste, sugar, roasted cumin powder, degi red chilli powder and mix everything well. Keep aside for serving.

Ubale huey gosht ki namkeen yakhni mein khade masale dalcheeni, laung, kali mirch, choti aur badi elaichi, syah zeera, javitri, jayefal, tejpaat ka desi ghee mein chonk lagake jab golden sela chawal dal ke pakaya jata hai dum pe aur ooper se meetha attar, ark gulab, aur zaafran, dahi, doodh mila ke tayyar karte haen biryani ko. Thanks for this recipe. Every other cooker biryani calls for pressure cooking on high flame. Pretty much destroys the vegetables. With this one, the roasting plus pressure cooking on medium heat means the vegetables have just the right amount of bite. Also, adding paneer while layering instead of the marinade makes things easier.

Re putting the pressure cooker weight, as has been taught to me by my friend Jennifer, pulao, masala bhat in the cooker, all we do once we close the lid is cook on med high flame till you see steam out thru the nozzle, then immediately lower the flame to minimum and let it cook for exact 10 minutes n put off the gas supply. Let it remain for 10 minutes, you will get pulao, rice, biryani with rice grain non sticky and fluffy too...it works...recipe is of course yours to make it tasty 😃

Actually we do the same type as u told but just don't marinate with curd but this time I think I should marinate with curd and we are vegetarians and do it in cooker and call biryani only not paluvao
