Khichuri is a rainy day comfort food. I'm a Bengali from Meghalaya and we eat Khichuri regularly as it rains here a lot. We make "non-vegetarian" (according to Bengali food rules if onion and garlic are added to a dish then it becomes non-vegetarian even it is technically vegetarian/vegan if butter or ghee is not added) khichuri with masoor daal and eat it with aloo bhaja (fried potato) and omlette during rainy days😋😋. The khichuri you made looks so delicious, apt for a rainy day.
In Bengal, we dry roast the moong dal and then rinse it off, once or twice. Hence we don't add ghee at the roasting step. The ratio of rice and dal is always 1:1 in Bengali style khichuri. Many thanks Chef for making Govind bhog rice familiar to all your viewers. 🙏

Chef, in authentic Bengali khuchuri , we dry roast the shona Moong daal , then rinse it off the impurities, and then again roast it in ghee after adding the 'foron' along with soaked rice.. hence the roasted wet daal and rice are roasted in ghee with the foron (jeera ,whole garam masala and bay leaves) ... And the ratio authentically is gobindo bhog : shona Moog daal = 1:1 Thank you very much making and sharing these delicacies ..

love u ! I If woke at 11 AM sometimes, my lunch would be plain kichdi , only kolam rice , moong daal , black paper , turmeric , green chili , ginger , and red chini and salt , water as liqiod as it is , Acid reflux gone .. :) Thanks for covering it Chef

Hello Ranveer, I am from Pakistan and here we make Lucknow style khichdi, i.e. Pulao of mung daal. I didnt even know about porridge style khichdi until I saw this video. But I must admit they all look delicious! Thank you for sharing these great dishes. Can't wait to try it!
