Thank you for your recipes!!! I made this using my Cuisinart automatic pasta machine (mixes and extrudes). The pasta extruded perfectly, I dried it according to the directions. When the drying and cooling time was up the pasta was very fragile. When I boiled it for 5 minutes it was adenté but was too fragile and fell apart when I stirred in my sauce. Did I not mix/kneed it long enough or too long?
You're most welcome Bruce 😊 You overcooked it to be honest. The pasta should only be cooked for 1 to 2 minutes maximum. Remember after we switch off the heat the pasta is still softening in the sauce. It sounds like you did a fantastic job though. Thanks again ❤️
Yeah a gluten free! So many make keto but put gluten in it - I am not yet sure fi I can have lupin f;our as I ahve a peanut allergy - but only way to find out is to try a bit.I wonder if it can be dried in a good dehydrator??
Hello Rebecca. You can't have Lupin Flour if you have a peanut allergy. Please use the gluten free recipe. It can be dried in a dehydrator, overnight on your bench top or an hour in the oven on low :))

Hi, you're most welcome. It's works for the kitchenaid and Phillips pasta makers. The pasta cooking time is 2 minutes. If you want to bake it in sauce you would add it then grill the cheese 🧀

Yes a liquid egg substitute will work. I read somewhere that agar agar is much weaker than Gelatine and one would have to use more. Perhaps add a little more xanthan gum which would also work

Love this recipe. I'm drying the lupin macaroni pasta now and trying this one as well today. Quick question: Once the shells are hard can I just add them as is to my baked mac & cheese casserole recipe, which calls for baking at 350 for 30 minutes? Or should i cook them as you suggest for two minutes? Also, the recipe I'm using calls for 1 lb. of regular dried elbow pasta, which swells considerably after cooking unlike your's. What would you recommend for amounts of your pasta, which probably don't swell much if at all? Thanks.
Thanks so much Stuart. I'm sorry to reply so late. I live in Australia so time zones are a problem. They need about 10 minutes to bake in the oven. That should be enough to grill the cheese as well. If you like you can cook them or boil in water for 1 to 2 minutes. For the 2nd question...can you please confirm whether you're doing keto or no? If so you would need to adhere to the serving suggestion. If not it really depends on you. Do you want to make enough elbow for 1:1 compared to regular pasta? In that case about 2lb (or slightly less) given it doesn't swell. 😊

To piggyback off of Stuart's question, usually bake mac and cheese requires you to boil the mac for about 6 minutes until al dente, shock with ice water, and then mix with the cheese (and whatever else ur cooking,) and then bake for an additional 25 minutes or so. With this mac, do you just skip the pre boil part and drop the hard mac into the cheese and bake for ten minutes or so?

Hello Ilene hope you're good today. 1 serving is 155g of dough (about 1 cup). You still need to dry it out so the Gelatin and xanthan gum can bind the pasta shape. It doesn't hold together so well of you boil it straight away.
I do not have a machine to make the macaroni pasta. Ehat other way is good. Live you videos. Hoping this helps I'm a diabetic and I'm looking into other alternatives

Sabra, the egg yolks are probably needed to hold the pasta together. For a vegan recipe, you probably need to experiment with keto thickeners like agar agar, zanathan gum. Im not sure if the egg subs will work. you might check the package label to see what thickeners are being used. I bought the agar agar from Kitchen out to me. I remember that it’s a one to one ratio for something, but I forgot what. I’m gonna try the same amount of agar, agar as gelatin. Or I might contact them, and ask what the proportion is. Their agar agar is the very best
I just tried this and made spaghetti it kept breaking and could not separate the noodles without them breaking up so I don't even know if they will turn out I might just have several clumps of noodles lol they are in oven now and it only goes as low as 170 degrees

Help! My gas oven does not go lower than 175°f. I checked my toaster oven, and it doesn't go lower than 150°f. Any advice? I guess 150°f for less time? How long?
When I used to make beef jerky and my oven didn't go low enough, I would put it on lowest setting and prop door open (about 1/2 inch) with wooden spoon handle. It works great for drying out foods without overcooking them. 👍🏻

Hi and your very welcome. I used the My Fitness Pal app to calculate the macros. Please see the screenshot towards the end of the video showing the macros. I think it does depend on the brand of coconut and almond flour. My brands for the almond flour is by PBCo and the Coconut Flour is by Nuie. I was surprised too to be honest.

Not trying to be funny or anything but how is this a 0 net carb recipe? I put it in chronometer with my brand of ingredients, split it into 2 servings and its 6.9g carbs per serving. Almond Flour here is around 6.8 carbs per 100g and Coconut Flour 16c per 100g lowest I can find anywhere in UK x
Hello Dawn. It's a great question. I put a note in the description about this very topic, the carb count is very much dependent on the brand of flours. If those brands are the lowest in carb you can find then 6.9g/serve would be the count for you. If I was in your situation and I wanted pasta I would save my carbs so I could have it. Hope that makes sense, but please check the description box too as I state my brands. Is the brand 'Anthony's' available to you on Amazon? I think it's 2g net carbs/100g. The fiber in the Coconut Flour matched the carbs, so that's how I got to zero.. Also towards the end of the video I show a screenshot of the My Fitness Pal count.

I purchased the Kitchen Aid Pasta Maker and tried this. The machine extruded the fusilli about 1/2 inch then stopped & got completely jammed. I followed the recipe exactly, so I don’t know if it is the machine or something I might have done. Any suggestions? Thanks.

Your dough is very wet then. Please keep an eye on them 170 degrees is much higher than recommended.
Can you store this in the freezer or food sealer before cooking for the additional 2 minutes?
Hello. Yes that is the best way to store. It''s best to let it defrost naturally, it doesn't do so well with a microwave defrost.

Hello Alia. It is very delicate before baking. I havent tried it. Maybe once made pop a couple into hot water to see if it disintergrates
Can you omit the the xanthan gum in the recipe I am allergic?
Please double the Gelatin amount in that case. The amount of binding agents is essential :))

I purchased the Kitchen Aid Pasta Maker and tried this. The machine extruded the fusilli about 1/2 inch then stopped & got completely jammed. I followed the recipe exactly, so I don’t know if it is the machine or something I might have done. Any suggestions? Thanks.
