Easiest Vegan Dinner Ever! Sheet Pan Gnocchi

    This quick yummy dish needs very little preparation and is so satisfying. The slightly crispy bites of gnocchi, garlic and herbs make this dish so tasty!
    Ingredients:
    1 package (500 g) Gnocchi ( check ingredients of shelf stable gnocchi. Not all brands are dairy free)
    6-7 tbsp Olive oil
    5 cloves of Garlic
    3-4 shallots or 1 medium Red onion
    1 package (227 g) Mushrooms (cremini, oyster, or any combination)
    ⅓ cup Sundried tomato, sliced
    1 ½ cups Spinach
    1 tbsp Rosemary
    1 tbsp Thyme
    Salt to taste
    Pepper to taste
    Crushed Chili pepper (optional)
    Instructions:
    Heat oven to 425°F.
    Prepare the vegetables: Slice shallots, mince garlic, slice sundried tomato, and chop the herbs finely.
    On a sheet pan, place the gnocchi, garlic, shallots & mushrooms. Drizzle 5 tbsp oil. Bake in oven for 25 minutes.
    Take out of the oven. Drizzle 1-2 tbsp olive oil and toss with herbs & spinach. Put tray back in the oven for another 5 minutes.
    When the removing from the oven a final time, add salt & pepper and optional crushed chili pepper to taste.
    Suggestion: You can top this dish with grated vegan parmesan when serving.
