Crispy Brussel Sprouts & Bacon! SO Easy & SO TASTY!

  • This easy brussel sprouts with bacon recipe is a delicious side dish, even for the most novice home cook. Brussel sprouts in the oven and roasted until they are charred and crispy the outside and tender on the inside with a little help from a little bacon and onions. The crispy brussel sprouts don't need any help and can been eating without anything else right out of the oven for dinner but with bacon and onions will get even the pickiest of vegetable eater to be asking for more!
    Crispy Brussel Sprouts with Bacon
    Prep Time: 5-10 min
    Cook time: 25-30 min
    Total time: 30-40 min
    EQUIPMENT
    · cutting board and chef knife
    · large mixing bowl
    · medium sized frying pan
    · 2 small bowls or containers
    INGREDIENTS
    Produce & Protein
    · 10-20 Brussel sprouts, trimmed and halved
    · 2-3 oz bacon, cut into small pieces
    · ½ onion, sliced
    · 3-4 garlic cloves, finely chopped
    · a few sprigs of parsley, leaves removed from stems and finely chopped
    Pantry Ingredients & Seasoning
    · Olive oil
    · 1-2 tsp Chef Ange Base Seasoning (see page #)
    · salt & pepper
    · 1-2 tablespoon white wine vinegar
    DIRECTIONS
    Preheat oven to 375F convection or 400F regular oven
    Ingredient Prep
    1. Trim Brussel sprouts and cut in half. Remove any discolored leaves and place in a large mixing bowl.
    2. Slice onions
    3. Crush and chop garlic
    4. Cut bacon
    5. Place prepped onions, garlic and bacon in small containers for stovetop assembly
    Assembly
    1. Preheat oven to 375F convection or 400F regular oven
    2. Toss Brussels sprouts with olive oil and base seasoning
    3. Arrange on baking sheet with cut side up. (Line baking sheet with silicon mat, parchment paper or aluminum foil to save on clean up)
    4. Place tray in oven for 20-30 minutes or until browned and loose leaves are slightly charred. (Periodically check in on the Brussels sprouts in the oven and give the pan a shake and/or turn the pan to get even browning).
    5. Brown bacon pieces in a frying pan over medium to medium high heat. Move pieces around in the pan to get even cooking.
    6. After fully cooked, remove pieces keeping rendered bacon fat in the pan.
    7. Reduce heat to medium and add onion slices to bacon fat and sauté until they begin to brown. (If not enough bacon fat in the pan, add a little olive oil.)
    8. Add garlic and sauté 1 min.
    9. Add heavy splash of white wine vinegar and let evaporate a little bit.
    10. Shut off heat and season with salt and pepper
    11. Return cooked bacon to the pan and sprinkle with chopped parsley
    12. When Brussels sprouts are done, transfer to large bowl and toss with bacon and onion mixture

    My husband and I are in our 80's. We are under quarantine because of the virus. Our son has been grocery shopping for us. I told him to bring a few brussel sprouts home for us. He bought a big bag. I didn't know what to do with them. After watching your video, I know I am going to try it, as it looks good. I have gardened all my life, and like all vegetables, except brussel sprouts. They are my husband;'s favorites though, and yours looked so good, maybe I'll try them. Thank you for sharing.

      Here I am a year later. I've tried cooking the brussel sprouts all kinds of ways. My husband liked them all. I just can't seem to eat them. They seem to grow in my mouth and I can't get them down. Yikes.

    I searched dozens of online recipes, but this one stood out. I have had similar preparations in trendy restaurants but this one was on another level. The only adjustment made was the addition of 3-4 tablespoons of maple syrup at the end which I think provided great balance considering the recipes addition of wine vinegar at the end. Brilliant job chef Ange. This will be my future default for brussel sprouts.

      I’m growing Brussel sprouts in my garden this fall! They love the cold and frost! It’s the first time I’ve done this and I just found out how beautifully they grow on the stem of the plant. Who knew??!!

    Thank you, this looks lovely. I like to make my Brussels sprouts with red onion and deglaze the pan with either white wine or chicken broth. Adding in that crispy bacon, minced garlic and parsley is so appealing. Reusing the bacon fat is just how my grandmother used to cook. Bravo!

    I had this dish at a restaurant here in Seattle a few years ago and it was so delicious I wanted to be able to make it at home. I've tried a few different recipes I found online, including the Food Network's recipe. They were all meh, your recipe blew them all out of the water!! Sooo good!! Thank you 🙏

    Used to love steaming chopped Brussel sprouts in a steamer basket. Then stir-fry with some chopped cocktail onions, garlic, mushrooms, throw in some chopped pepperocini and feta cheese, serve in a warm pita-pocket with some warm falafel and hummus.

    Excellent!
    Was tortured as a kid in the 1960s and 70s by those little green bastards back in the day when NOBODY cooked with garlic here in the UK. Am a convert now due to Italian wife’s excellent reinterpretation. Chopped cabbage also takes on a delicious caramelised flavour when cooked this way or even fried in a pan.

    I love this recipe. I've been making it a long time almost exactly like this. I skip onions though and use shallots. At the end when it's still hot, I take it next level with a dash of nutmeg, a splotch of butter, then crushed walnuts and tossed with a bit of maple syrup. (Yes, I'm Canadian lol)

      Boil carrots sweet potatoes and squash. Even a bit of pumpkin if you like. Whip them up like you would mashed potatoes. Butter and maple syrup of your favorite spice. I personally use everything bagel seasoning. 😁

      Here’s a recipe you may like. Boil squash sweet potatoes and carrots. Mash them up after cooked. Add bit of butter salt and pepper if you choose. If you have a bit of canned pumpkin add some that’s a bonus. A whisper of maple syrup on top and serve. yummy.😁Merry Christmas enjoy.

    Great recipe. The only change I made was using some of the bacon grease to coat the sprouts instead of cooking oil, and added in some toasted pine nuts at the end. We make these a couple times a months now. Thanks.

    My wife Loves Brussel sprouts and bacon and everything you used except we will omit the wine. I went out to the store today and bought some fresh brussel sprouts and No sugar added bacon. I made this for her dinner with some baked spiced up chicken Breasts, She said MMM. just like you did. And said this is so Good and Delicious. So i will be making it for her at Christmas 2021.     I’ve been making this recipe stovetop rather than in oven. It’s not only my favorite way to make Brussels sprouts but also one of my favorite keto meals, I buy the frozen Brussels sprouts from Costco, which already has bacon. I add more bacon. Plus onion. My Dutch oven tends to get a lot of brown stuff stuck on, so I loosen the browned stuff with a splash of balsamic vinegar, keep the heat low, and cover with lid. I just eat a plate of that for dinner. So good! Thanks for this recipe!

    Nice simple way you described to caramelise the onions and garlic with the white wine vinegar. Really brought out the flavour. I used an air fryer to cook the Brussels, roughly 15 mins. Altogether VERY nice!

    The recipe is awesome! We’ve often used similar ingredients, but combined them all first and baked them together. This method keeps the sprouts crunchy and the white white provides a delicious sparkle . Great job Chef!

    Chef Ange, came to this from your new and improved crispy chicken recipe/tutorial. Been oven roasting sprouts to the point of light char with various treatments prior to this and am about to try your version. Two things I like in your presentation. First, in this video I see what is lacking in your recent crispy chicken recipe: alternate times/temperatures for those of us still stuck with Stone Age conventional ovens versus convection ovens. Thanks for doing that to minimize our experimentation with time/temperature at home. Second, your detailed written instructions in the description portion of your video.

    I love Brussel Sprouts. I'm going to try this. I roast my Brussel Sprouts just like this but toss it afterwards with some Asian spicy and sweet pepper dipping sauce. So yummy.

    Oh gosh! They came out great. I made these. However, I didn’t have the white wine vinegar but I did have the rice vinegar, and yes, I tried it. And oh boy! I was shocked and amazed as to how good this was! Thank you Chef Ang!!! This is becoming a staple for me. I think I’ll double the onion blend portion next time. I LOVE carmelized onions. 😂

    Hello. As a frenchman, I am a bit shocked you did not "whitened" your B.sprouts :)
    By boiling them just about 2 minutes before cooking them, you'll remove a bunch of sulfur which will make them more digestable and taste better.

    Yum! Going to try this next week. I liked your tip about cutting bacon while semi 🙄frozen. When I make this I think I'll dice the onion because I don't like long strips of onion.

    I do something like this but cook it all together in a frying pan, I'll have to try baking the sprouts to keep them more crispy, I also include broccoli. Thanks for idea!

      I slice my Brussels sprouts down the middle sliced side up then sliced white mushrooms on top baking till crispy shut off oven heat sprinkle crumbled blue cheese all over till melted then enjoy
