Crockpot Lentil Soup | Comfort Food For The Soul

  • Prepare crockpot lentil soup in the morning and have a filling and healthy dinner ready in the evening. With a combination of beans and vegetables, this soup has lots of unique flavors.
    How to bake bacon 0:37
    Ingredients 🥬
    3.5 oz bacon (6 slices)
    1 onion
    2 cloves garlic
    1 cup dried green lentils preferably soaked overnight
    1 cup dried red lentils preferably soaked overnight
    1 cup cannellini beans (white kidney beans) preferably soaked overnight
    1 cup diced celery
    1 cup diced carrots
    1 Tbsp fresh thyme leaves
    1/2 tsp-Tbsp chili powder
    6 cups flavorful chicken broth
    sea salt
    pepper
    parsley for garnish
    Instructions ✏️
    1. Add lentils and beans to a large bowl and fill with abundant cool water. Soak for at the very least 2 hours, better overnight (10-12 hours).
    2. Peel and finely chop onion and garlic. Peel carrots and dice. Wash celery and dice.
    3. Add chopped onion and garlic and diced celery and carrots to the crockpot.
    4. Drain and rinse soaked lentils and beans and then add to the crockpot.
    5. Add thyme, chili powder, sea salt, pepper, and broth to the crockpot, give it all a quick stir, then place the lid on top.
    6. Set crockpot to 4 hours on high or 8 hours on low. (For unsoaked legumes, use 5 hours on high and 10 hours on low).
    7. 30-45 minutes before cooking time is over, crisp up bacon in either a pan over medium heat or the oven at 400F for 20-25 minutes on a baking sheet.
    8. Before serving, give it a taste to see if it needs more seasoning with sea salt and pepper.
    9. To serve, add to a bowl, sprinkle crispy bacon, and finely chopped parsley on top and enjoy!

    Thank you for sharing this recipe. It's a favourite now over here. My husband and I have always loved lentil soup (and I love my Crockpot). This is my go to recipe for that now.
    So good, healthy, AND not fattening too.

    thank you very much. ill try it this week... i feel like this is definately something which will be more rewarding and taste way better in crocpot instant of instant pot ( i have both ).

    I'm going to try this thanks! Btw if you have a George Foreman grill you can plug that thing into an extension cord and fry your bacon on that totally outside. Great video!

    I think it's strange how good lentils are. I kind of don't like beans, but lentils are great.

    When would I add diced potatoes? If possible

      At the beginning with everything else. Make sure they are waxy potatoes not starchy or else they will disintegrate.

      I'm German (born and raised) but my mother is Peruvian and spoke nothing but Spanish with me. I'm married to a Mexican with whom I only speak Spanish, and lived in Mexico for 4 years. Learned English at school, 6 months living in Australia, 6 months living in California, 2 years living in London, and 8 years living in Canada so my English accent is influenced by Germany, Peru, Mexico, Australia, UK, Canada. Lol. That's why nobody can place it, haha

    I’ve just purchased these items to make this! (It’s 9pm here in Australia) I’m going to soak my beans overnight, and then get it going.
    I do have a question though, could you add chicken thighs or breast to this?

      Yes! Chicken thighs (preferably bone-in) will hold really well in the crockpot for the extended cooking time. Breasts are trickier. They dry out with long slow cooking.

      7 quart I think. I bought it years ago for $34 dollars at Costco. Whatever one that is.

    Maybe someone has a suggestion. I made this. Very flavorful, good texture, etc. But every time I take a bite my mouth is full of hulls. Caked on the roof of my mouth. Is it that I could not find quality lentils? I do have an issue with bean hulls, I strip my chickpeas, but this is crazy bad. So sad, this was my meals for a week, Hull Hell. :)

      Oh, I've never heard about that before. Chickpeas yes but other legumes no. Where do you usually buy your lentils?

      @@Greenhealthycooking At the finest Walmart in town. Small town living is mostly good but, especially in a pandemic, the choices are limited. One bag was from Mexico and the other, who knows. I will not try dried legumes again.

    Could I swap the beans for chickpeas?

      You can in theory but the texture will be completely different. Cannellini beans are super super soft and make the soup pretty creamy. Chickpeas won't create the same effect.

      @@sandeesandee2562 they are very similar but not the same. Cannellini beans are white kidney beans or Italian kidney beans. Great Northern beans have a grainier texture.
