  • Some apples are best in desserts, others in salads. And some are just meant to be eaten out of hand. But with so many varieties of apples available, choosing the one best suited to your recipe can be overwhelming. Thomas has taken the guesswork out of this process by organizing the apples into two major categories: firm and tender.

I have made apple pies with Gala apples for years and my pies always come out amazing. They're not too sweet, not too tart and don't dissolve during baking at all.

I like softer apples in apple pie and firmer apples to eat plain. Who wants crunchy apples in an apple pie... you need a cobbler to have mushy apples

I love the Kitchen Conundrum series! On an unrelated apple topic, can you give us any ideas on how to cook eggplant? From my stir frying eggplant experiences, I've learned that eggplant absorbs a lot of oil and it can be really hard to infuse flavor into the eggplant. Are there any other ways to cook eggplant rather than deep frying or covering it in cheese like an eggplant parmesan?

I recently went through the effort to salt eggplant slices (to make them sweat) and rinse and dry them afterwards. Normally I wouldn't do these steps because I thought it wasn't worth it. Turns out it was! The eggplant was seasoned through-and-through and had a nice bite to it after grilling it in a griddle pan. I recommend Shira Bocar's Soba Noodle salad. It was delicious!

Gaila are my favorite as a middle of the road apple. They're sweet, but with a hint of tart (unlike a lot of sweet apples) and I use them for baking.
Sure they get soft, but you should be making an apple crisp instead of using a normal pie crust anyway, so you want to get a nice soft inside.
Mixing types isn't bad, but if you're going to buy a bag of just one apple, Gaila all the way.

I think it all depends on how long you cook for the pastry required, whether you pre cook the apples, how much sugar you add,

My conundrum - getting apples baked tender in a pie. If I bake them in the shell they don't always come out tender but the crust is baked to perfection (even slicing them fairly thin). I tried cooking them on the stove first and then they lost their shape and were not even recognizable as apple pieces. What's the best way to get a tender apple in a pie without over-baking the crust?

Red Delicious, believe it or not was made for looks and shelflife not taste. There's a documentary that explains how people would buy the better looking apple and sellers could keep that apple on shelves much longer. The honeycrisp was made based on taste alone as a response.
