  • Trying out a new approach to Barbacoa. I always love the dehydrated part of Barbacoa where it has so much flavors. This recipe is an experimental cooking to dehydrate the whole piece of meat and rehydrate with spices and seasonings to maximize the tastes. 😎

    The result is what I like. I think some people might prefer more fatty and tender meat texture. The fragrance is simply amazing 🍁
