Great recipe. Techniques good. Yogurt technique is correct. Bhunna chicken is great. Use a wok. Youll get faster betterresults than aluinium pans. They are the curse of any kitchen! Heat conduction is horrible!
I added some left-over cooked/cubed new potatoes and cauliflower florets to this recipe at the end and it fed four when visitors arrived unexpectedly - simply gorgeous!
And also my wife says when the curry is warmed the next day it's even better. She's right. It's absolutely amazing Auntie Bumbi. We love you so much already .

This was an incredibly useful video, and a delicious curry thank you so much Bumbi! I was lazy and used Kashmiri Basaar dry fried then mixed in with the yoghurt. It was still one of the best curries I’ve ever made despite the short cut and lack of bay leaf. Had it topped with bananas and pineapple too which worked well :)

Welcome 🙏🏾, I am glad you are here. As long as you use chicken thighs it will get soft and succulent as it cooks but please do not use chicken breast for curries. I never use boneless chicken breast for curries as it gets dry and fibrous.

That's interesting, and has different stages than I would usually go through, such as adding the salt later, and mixing the spices with the yogurt. I've been making Indian food my whole adult life, now 59, and You Tube is so useful to learn differnet approaches and techniques. I never follow recipes completely but the spice mix you recommend works for me, the addition of nutmeg and mace etc, and the little lemon, are the touches that make the difference I think. Lovely!

Looks good.but from places in southeast Asia spices too many hard to find.if ordinary bottled powder curry will do there still many spices that i have to find. I think 🤔 this recipe will be on my wish list.

All dairy products will separate and curdle if cooked at boiling point includes creams, yogurts, milk, so if you cook bring the temperature down to a simmer it will not break apart or curdle
I grew up in Indianapolis Indiana and my mother would always take me to Indian Palace for their lunch special buffet and I would always eat lots of curry chicken at some tikka masala and lots of curry lamb I grew up to be a top-notch cook in a restaurant and this recipe is amazing 🎉🎉🎉thank you for your wonderful recipe 🤗🤗🤗

I made this last night, and I must say the flavour was amazing!!! I kept it mild, using merely Paprika, instead of chili powders. The only thing I will do differently the next time I make it...and there WILL be a next time...is to add some potatoes, or some chick peas for more substance. Definitely recommend.

I have been trying to transition into vegetarianism, though I've settled for a pescatarian diet (eating chicken occasionally). In any case, I sub all of your recipes that include chicken with tofu, fish, or chickpeas AND it makes being vegetarian/pescatarian so delicious !!!! You taught me how to be a better cook. Using Indian spices for many of my usual recipes have elevated my usual go-to dishes. Thank you SO much Bumbi!

Writing this while eating this dish. Fantastic and simple recipe, I was lazy to make the aromatic spices so instead used garam masala. The gravy wasn't thickening until the 18th minute as yours and thought I messed it up however at the 20th minute, it came out very thick like yours. I will continue doing this. Thanks.

Hi Bumbi, Here in South Africa ,we don't use yougart to cook curries. I tried it once, and the curry was bland ,meaning the curry was not pungent. We love pungent food. I think the yougart took away the hotness of the curry. What do you think.
You can even make curries without yogurt but it does bring in a creaminess to the gravy. You can add more chilli powder if you prefer and you need to cook the yogurt very well till the oil separates.
Can I substitute milk or do without milk. Also, most of your cooking are using minimum spices, can your curry have enough spices taste? PS, I am Chinese very interested in Indian cooking
You can do this without milk but milk is the unique addition to this recipe. Regarding spices, you do not need a huge amount of spices to make a curry taste good. A little goes a long way and brings in a balance. At the same time you can always up the proportions stated according to your preference. Please do visit my channel page for more recipes. Thanks

Hi, the chicken though added raw, is fried with the ginger and garlic till the oil is released. It takes about 10 minutes or more for the oil to be released.This method of frying is known as “Bhuna” and it is enough to develop the flavors. The yogurt is added only after this frying process.

If you want it less spicy cos it’s quite a kick just a little less chilli powder and a tiny bit more sugar yum x

Yoghurt and milk are the .ingredients of North india. In the South they are more coconut milk and grated coconut..

I grew up in Indianapolis Indiana and my mother would always take me to Indian Palace for their lunch special buffet and I would always eat lots of curry chicken at some tikka masala and lots of curry lamb I grew up to be a top-notch cook in a restaurant and this recipe is amazing 🎉🎉🎉thank you for your wonderful recipe 🤗🤗🤗

I made this last night, and I must say the flavour was amazing!!! I kept it mild, using merely Paprika, instead of chili powders. The only thing I will do differently the next time I make it...and there WILL be a next time...is to add some potatoes, or some chick peas for more substance. Definitely recommend.

I have been trying to transition into vegetarianism, though I've settled for a pescatarian diet (eating chicken occasionally). In any case, I sub all of your recipes that include chicken with tofu, fish, or chickpeas AND it makes being vegetarian/pescatarian so delicious !!!! You taught me how to be a better cook. Writing this while eating this dish. Fantastic and simple recipe, I was lazy to make the aromatic spices so instead used garam masala. The gravy wasn't thickening until the 18th minute as yours and thought I messed it up however at the 20th minute, it came out very thick like yours. I will continue doing this. Thanks.

Hi Bumbi, Here in South Africa ,we don't use yougart to cook curries.
I tried it once, and the curry was bland ,meaning the curry was not pungent.
We love pungent food.
I think the yougart took away the hotness of the curry. What do you think.
You can even make curries without yogurt but it does bring in a creaminess to the gravy. You can add more chilli powder if you prefer and you need to cook the yogurt very well till the oil separates.
Can I substitute milk or do without milk. Also, most of your cooking are using minimum spices, can your curry have enough spices taste? PS, I am Chinese very interested in Indian cooking
You can do this without milk but milk is the unique addition to this recipe.
Regarding spices, you do not need a huge amount of spices to make a curry taste good. A little goes a long way and brings in a balance. At the same time you can always up the proportions stated according to your preference. Please do visit my channel page for more recipes. Thanks

Hi, the chicken though added raw, is fried with the ginger and garlic till the oil is released. It takes about 10 minutes or more for the oil to be released.This method of frying is known as “Bhuna” and it is enough to develop the flavors. The yogurt is added only after this frying process.
