Hi. Yes you can use blueberry compote, as they are pretty similar. Yes you can use apple cider vinegar, only thing there is an apple flavor, that's all, if you don't mind. You may use same amount of vanilla essence as mentioned for vanilla extract ☺️

Hi! Sorry to bother you but I’ve watched many of your eggless cake videos and I’d really like to seek you expert opinion. May I ask if it’s common for cakes made with oil to kind of ooze oil when touched? If not would you know what I might be doing wrongly please? The eggless cakes I make with butter seem fine but the cakes with oil always turn out a bit strange and oily and the taste of oil is also very apparent. The only thing I’ve been modifying in these recipes is that I’m cutting down the sugar quite a lot because my folks at home can’t have too much sugar. Thanks so much! :)
Hi dear. Ok, this is what I think. Since you're cutting down the sugar, you might need to cut down some oil too. Really depends the amount of sugar cut down. Say if you cut down 20% sugar, try cutting down 20% oil as well. The sugar dissolves in the oil, you'll need to mix vigorously to combine them. So when you reduce the sugar, some oil still remain as it's original form and the consistency here will be quite different, and result in an oily cake. Once again, reduce the same percentage of oil just as you reduce in sugar. And you'll probably need to add a little more milk at the end if the batter is too dry (add a tbsp at a time) I hope this will help ☺️
@@Cecilia-wx6vl Hi Cecilia! I haven't had any luck with eggless oil-based cakes unfortunately as I do need to cut the sugar down quite a bit. The best texture I achieved with eggless low-sugar cakes have been cake recipes that are yoghurt + milk + butter based. (1) Combine yoghurt and milk with baking powder and soda and set it aside till frothy. (2) Combine butter, flour and sugar rubbed in how you would to make a crumble. (3) Combine the two together and whisk till you get a silky batter. I only can afford about 1.5 tbsp of sugar for my folks at home so this method suited me best.
Yes sure. Just add a couple tbsp spoon of lemon juice and some lemon zest to the cake. Bear in mind, if you're adding 2 tbsp of lemon juice, you'll need to deduct 2 tbsp of milk from the recipe 😊
