    Recipe :
    Mix Veg Kofta Curry
    Ingredients:
    2 Tbsp chopped Cashew nuts
    2 Medium Onions
    1” Ginger
    6-7 Cloves Garlic
    6 Tomatoes
    1 Carrot
    1 Large Potato (boiled)
    ¼ cup Green Peas
    100g Paneer
    1 Tsp Kashmiri Red Chili Powder
    1 Tsp Coriander Powder
    1 Tsp Garam Masala Powder
    ½ Tsp Black Pepper Powder
    2Tbsp Besan
    1 Tsp Kasuri Methi
    1 tbsp Corn Flour
    ½ cup Flour
    Salt to Taste
    4 Tbsp Oil
    Vegetable Kofta Curry
    1 Bay Leaf
    1” Cinnamon
    2 Green Cardamoms
    1 Black Cardamom
    ¼ Mace
    ½ Tsp Turmeric Powder
    1 Tsp Kashmiri Red Chilli Powder
    ½ Tsp Garam Masala Powder
    1 Tsp crushed Kasuri Methi
    ¼ Cup Cream
    Coriander leaves to garnish
    Salt to Taste
    Method:
    Roughly chop the onions, tomatoes and ginger.
    Cook together the onions, tomatoes, ginger, garlic with 2 cups water till the tomatoes are soft and pulpy. Cool and grind to a smooth puree. Strain the puree.
    Grate the boiled potatoes, carrots and paneer. Crush the green peas. Mix together the vegetables, besan, corn flour, salt, pepper, red chili powder, coriander and the garam masala powder and mix well. Bind to a smooth dough. Break the dough into walnut sized balls. Roll the balls in dry flour.
    Heat the oil in a pan. Shallow fry the kofta balls till golden on all sides. Remove and set aside.
    To the same oil, add the whole spices and allow to splutter. Next add the powdered spices, mix and immediately add the prepared tomato onion puree. a
    Add ½ cup water and bring to a boil. Add salt to taste. Finish with cream and then the kasuri methi.
    Add the kofta balls, toss and serve immediately garnished with more cream.
