    Recipe :
    Paneer Kofta
    Preparation Time: 20 minutes
    Cooking Time: 25 minutes
    Serves: 3-4
    Ingredients:
    250g Paneer
    1 large boiled potato
    1 tsp dry mango powder
    ½ tsp red chili powder
    2 tbsp flour
    1 tsp salt
    1 tsp kasuri methi
    1 cup chopped onions
    1 cu[ chopped tomatoes
    10-12 cashew nuts
    ½ tsp turmeric powder
    2 bay leaves
    1 tsp red chili powder
    1 tsp garam masala
    ¼ cup cream
    1 tsp cumin seeds
    2 tbsp oil
    Salt to taste
    ½ cup flour (for rolling)
    Method:
    Boil together the onion, tomatoes, cashew nuts, 2 red chilies with 2 cups water for 7-8 minutes.
    Remove from heat, cool completely and grind to a smooth paste.
    Grate the paneer in a large bowl. Grate the potatoes over it. Add the salt, red chili powder, dry mango powder, kasuri methi, flour and knead to a smooth dough.
    Make walnut sized balls and roll in dry flour.
    Heat the oil in a pan. add the paneer balls and roll them in the pan. cook till the balls are golden from all sides.
    Remove the balls. To the same pan, add the cumin seeds and allow to splutter.
    Add the pureed mixture and mix well. Add salt to taste, red chili powder, garam masala powder and cook for 2 minutes. Add the cream and mix well. Sprinkle crushed Kasuri Methi and add the paneer kofta. Mix with a light hand.
    Serve garnished with more cream.
