    That highlight retention is INSANE!

White skin is approximately +1 stop over middle gray. So 7 stops over and holding the skin is actually 8 stops of highlight retention

if it's 7 over and 3 under, isn't it just shifted to the over exposure end?

The thing is, a production affording an alexa 35 and a truckload of lighting will never under or overexpose 3/7 stops. Paradoxically the alexa 35 would rather serve micro budget run and gun videographers better.

The Sun still exists in bigger productions. If you are shooting inside and don't want the windows to blow out, the extra stops of latitude could mean not having to having to gel the windows and/or blasting light in with big HMIs.. A real time/money saver.

Correct, but, there are scenarios when it would be absolutely helpful to have this much latitude. For example in the movie Palm Springs, the scene inside the bar when the double doors open and the two main characters enter. The highlights outside in the desert are completely blown even though they captured with an Arri Alexa Mini. In that scenario, this camera would be perfect. But other than that specific instance, yes you're a hundred percent correct
