i made this some 5 days ago and was afraid it wasn't gonna turn out well bc his butter is store-bought and i can't buy those so i made my own vegan butter with water, sunflower oil and coconut oil, but it turned out perfect! it's delicious, i love that so little sugar goes into the recipe and yet it tastes just right, i plan on doing this again in the future bc it's v easy to make and my non-vegan family appreciated it just as much as me.
came back to say i made these a second time today and i forgot to mention: don't underestimate the process of "perfecting" the shape and making it as rectangular as possible. after the dough hardens in the fridge it's difficult to shape it differently so you should do it before you put in the fridge, while it is still soft. the first time i made it i didn't shape the corners that precisely and then when it was time to bake i had to handle the dough again and make it into little balls, which is completely okay, but if you want the shape portrayed in the video you need to get the angular shape before you put it in the fridge

"in a fridge" sounds a bit awkward. Just a little thing, but honestly, your videos are already perfect so I guess I'm suggesting perfect+.
Yes, pastry flour is lower in protein (gluten) and is good for recipes like this where you want a short texture vs something like bread where you want the gluten to develop and be chewier.
Ryoya is vegan for a reason, hence the name of his channel, PEACEFUL cuisine. Get it??? Perfect vegan shortbread, and tastes delicious. I've tried them with Nuttelex which is available in New Zealand, though Naturli is a better vegan butter. Keep up the great work Ryoya!
@@asmokeus it has less gluten forming protein in it than regular all purpose flour. Same idea as cake flour, but it has somewhere in between the gluten content of cake and all purpose. (If you’re curious bread flour has more gluten to make things chewier) Obv shortbread should have a sort (crumbly) crumb and so not have much gluten formation. I can’t say how much of a difference it would actually make because I haven’t tried but that’s the idea at least!
