    I figured out who the intern was, but it was great to hear how he got the name the Intern! Thanks for sharing that!
    I love ground turkey/chicken. I use it to make sausage. I season it how I want, I even add diced sauteed onions, celery and sliced mushrooms and form into patties. I cook them then freeze. 0 points. Or I'll just cook it in the pan with seasonings and use it like ground sausage out of the casing. Still 0 points, or a little bit if you want to use oil to cook it in.
    I make meatballs or hamburgers like my mom does, but using ground turkey. An egg, a splash of milk, the meat, and in place of breadcrumbs, I use rolled oats. I find it's more filling. I've also added in mashed beans or lentils or even some mashed up tofu. It adds extra protein and helps stretch the meat, which is much more expensive.
    I've made turkey meatloaf. I do it similar to the meatballs, but I add in extra seasoning and I love to add in sauteed onions, garlic, celery, bell peppers and sliced mushrooms.
    To your meals with the beans and corn, you could add or top with salsa and sour cream or fat-free greek yogurt. You could add onions, bell peppers, zucchini, mushrooms, celery or any vegetable you like on the side, if you feel like you need more food or are extra hungry.
    Always have frozen fish: sole fillets, tilapia, salmon, shrimp, scallops, clam meat, muscle meat, crab meat. I always have canned tuna, salmon, sardines and sometimes canned mackerel. Great for quick meals. We make fishcakes, we boil potatoes and mash them without adding anything into it. Then we sauté some onion and add that in, then add in a can of canned fish, drained and mashed up. So for 1 small can of salmon, we use about 2-3 pounds of potatoes. (roughly, we don't measure. we just eyeball everything) or we use crab meat, we'll chop that up and sauté it with the onions and a little bit of butter. The only points is the potatoes and the little bit of butter, we have vegetables with it on the side. We make about 1/4-1/2 cup patties. Very filling for a lunch or supper. We freeze them and reheat from frozen in a pan. you can make them in patties and freeze or freeze flat in a bag and then it's even faster to reheat.

      If you just spray the chicken with the breadcrumbs before you air-fry it might keep them from being too dry. They look great. I found a recipe years ago in a magazine that had me putting chicken in yogurt with rosemary and a few other things and then in breadcrumbs and baking. It was so good.

    Hi Danielle... I would try spritzing the panko tenders with oil before placing in the air fryer to prevent the panko from drying out!! great info and video!

    I used to wonder who was Intern for a first few videos when I subscribed to your channel, but soon I figured it out with the context. I vaguely remember you called him boyfriend in a video, too. Nevertheless, it's good to hear the whole story. Kudos to him for being such a superb technical support😆. And, for me, successfully quitting smoking is a fabulous success story.

    I knew the story about how the intern became the intern but wondered about everything else. I also wondered if you ever tried to fight the grays and how do you keep them looking so bright. I have brown hair that my first gray was found by my older sister months after I had my daughter when we were 27. Sister and I are twins. Also I live in New England and I still think your little frozen fish is cute.

      😂 Thanks for the grace on my frozen fish. And YES!! I fought my gray hair for YEARS. Like years and years . . . and years. And let me tell you, it was a battle. My hair is very coarse, and my gray is silver, so it didn’t take color well, and as you can easily see, I have a huge clump of gray right in the front, so it showed very quickly when my roots started to grow in. I always looked like I got hit in the head with a snowball. 😂 I finally just got tired of fighting it about 8 or so years ago. It was a nightmare growing it out, too. My hairdresser is an absolute goddess . . . we did highlights to try to blend in the gray as it grew in so that it wasn’t just a stark line of gray moving down my head. It took a few years of highlighting and cutting pretty aggressively, but it was worth it. Now I just use regular (actually cheap) shampoo most of the time - I alternate different flavors of Herbal Essence (mostly because I like the smell) and about once a week (if I remember) I use a purple shampoo called Milk Shake Icy Blond Shampoo for very light blond and platinum hair. It’s supposed to make blond and platinum hair brighter, and it’s what my hair goddess told me to use, so it’s what I use.

      You’re going to laugh . . . they’re from Walmart. I just get the little kids’ ones in an XXL. 😂 The Intern keeps buying me nicer ones, but then I feel like they’re too nice to workout in, so I never wear them. I wear my Walmart ones ALL the time!!

      Yes and no. All of the workouts that I do are on the Peloton platform. We have a Peloton bike, so I ride that every day, and they have lots of different types of workout programs that you can do along with that. So I do the workouts on the Peloton platform, but I just kind of randomly pick which workout program on the platform I want to do.
