Nah, I like to cook the sausages in a pan till firm.. then cut them as you did and return to the pan. I like to put colour on the sausage and add that extra flavour.. you can’t over cook sausages and you are about to simmer them in liquid anyway.. looking at your sausages they don’t look all that nice. Try pan fry, cut and fry again.. it’s worth the hassle…

Why not brown the sausage in the pan instead of poaching them. That way get a fond too?
