Just do the same method as I show do not over mix the butter. Keep it soft but don’t allow it to get creamy. Then just fold the flour in on the slowest speed.
@Amond the pastry can freeze well. In an air tight container the mince pies will keep for a good few days but as everything is fresh best eaten asap. You could always freeze the mince pies raw and experiment with cooking them from frozen. We have never had them last more than a few days here so let me know how it goes.
Hi John it depends on the size of the tray you are using normally one that is just large enough to fill the hole. The one I use is roughly 7 cm in diameter. Hope this helps you out.

If you're going to go the whole hog and perfectly complement that delicate pastry, why not make your own mincemeat? I live in the Philippines so cannot obtain store bought jars so make it nyself. It's very simple and the beauty is that the dried fruit ingredients can be varied to suit personal taste. Also, you can add extras like slivered almonds to improve texture and as much, or little brandy, rum or sherry as you like. I make mine 3 months before I use it so it matures in the jar, but the longer you leave it, the better it tastes. I guarantee, once you make your own, you'll never buy off the shelf again.
I have now made them and tasted one. A very light pastry and just the right amount of filling. I made 12 mince pies/ Thank you again.

I made the pastry, tastes great, it wanted to break a little when being rolled out, I think it needed more water in it?
Normally I don’t have any problems with it unless I roll it out when it is very cold. Good to hear it tasted great.
